People have no idea amount of work and time you have to go through to make this one dish from scratch. 99% of thai wouldnt do this for home cook. 1% that do it wouldnt make the shrimp balls from scratch i can tell you that. So you are like one in a million white guy that can cook thai food perfectly. Hat off to you sir.
Feel better! If you’re up for it, get a chicken, some ginger, daikon, and green onions and make a broth. Season w a little soy and white pepper and you will be on your way!

Omfg! This is very authentic street vendor dish while going somewhere and just parked and eat some noodle. But that shock me is while you show how to made a meatball that seem rarely to know in the most Thai people. And this is my favorite dish when I want to have dinner. Do you already made "Sen Yai Yen Ta Foh" yet? That would work with your Tom Yum noodle soup there. And I like that also.
Great how to video, looks absolutely delicious! Keep the videos coming - slightly less complicated recipes also welcome, although it's fascinating seeing how everything is made from scratch. Just one thought, it was pretty hard to hear you at the end, you might need a microphone in your vlogging kit.

There is some salt in the stock, but for this particular application I do rely on fish sauce for the saltiness. I want the stock to the versatile as well so I can use it for other things.
