After a bunch of research - I narrowed my search down to between the Hapstone, and the TSPROF. I went with the TSPROF "Master Kit," and I'm some glad I did! The KO-3 is an incredibly well designed & manufactured system. A pleasure to sit down and work with. I'm still learning, and your tutorials have been very helpful to me, thanks very much - you are doing a great job. Take care...

Thanks to you I bought a Kadet pro after your review and after more one year of using it, I agree : it’s really great. Just bought the fillet clamp for narrow blades as I sharpen at 15 / 17 dps and use venev resine bonded and add a digital angle finder.

Been sharpening knives professionally for a few years now, using a TORMEK T8 with good variety of CBN wheels, that does a great job. I just purchased a TSPROF K03 Pro to step up my sharpening results even more. You mention the TSPROF diamond stones don't hold up to long. Which brand of 1 x 6 diamond stones do you recommend?

Yeah even with a diamond coated sharpening pen you can create a working edge like that very quick; it just eats away fast on your steel if it's not so hard. Love me a CC4 pocket sharpening stone though! Could shave with that 2 micron edge.

I have the Ts Prof Kadet, you are correct about the Ts Prof stones not lasting very long. I bought a combination of Veneve bonded diamond and Edge pro diamond matrix stones. Wanted all Veneve's but 600 and 2000 weren't available so I got the 650 and 2300 diamond matrix stones to fill in the gaps, also added a set of 1/2" Gritomatic boride stones for recurves. As expensive as the sharpening systems are the real expense is in the stones. Eventually I'd like to get the remaining Veneve stones and a full set of the diamond matrix stones as the two different brands give different results. You can spend $1,000 on diamond stones pretty easy. I highly recommend getting a Veneve 80 grit stone as it is great for reprofiling quickly.

Great Video! I have the KME, TSPROF Blitz, and the TSPROF K03. The Hapstone RS Black is going to work for most folks. The extra clamps and angle cube are worth the extra $$. The TSPROF K03 is going to be for your more serious sharpener folks. If you can freehand kitchen knives YOU WILL NOT need the TSPROF K03. I am refining my freehand sharpening game as a member of your channel. The subscription is well worth the money. Thank you again! 😎👍

Hi, I was a chef for most of my life and was. Pretty proud of my freehand stone sharpening skills. But I'm still interested in one of these systems. In your honest opinion, do you think the precision of sharpening of any of these systems makes a difference from freehand for kitchen, fixed, and pocket knives? I still currently sharpen about 12 kitchen knives, a handful of pocket knives and my brother in law's knives. I'm currently using soaking stones because that's all I knew up until very recently when I found Outdoors55 who also featured this channel. Blew my mind on what I thought I knew and I dove head first into the diamond/cbn sharping rabbit hole. Back when I was a chef, the diamond plates were still not great tech, but it seems now with resin bonded plates, there can be way better options.

Thanks for the Hunter recommendation! It outperforms my other systems, including Wicked Edge, and is the quickest of all my expensive systems. I can reprofile and achieve hair-splitting sharpness in under 10 minutes, making it worth the high price. Setup is also faster than my other systems, so I won't be using them anymore.

Got a 2k / 5K grit water stone, and a 5 / 2 micron CC4 pocket stone. I think 2 micron is like 10K grit. It's all I need I guess. Honing / polishing is my passion! 🥰 If I was having more so called premium steel than regular good steel, meaning very hard steel, I would also use a diamond plate on those suckers by the way! My hardest steel might me D2 lol. Oh, and I got a sharpening pen from Boker. It's diamond coated and it's good to give dull knives a quick working edge, very quick I think. I can polish out "imperfections" afterwards when I got more time, but it's so bitey I only used it on dull and cheap kitchen knives so far; since my edc and other pocket knife blades are honed smooth already.

Firstly I really like your videos, your energy & no doubt you are one of the street's smartest knife analyzers on RU-vid. What about freehand? I can sharpen my wood gauges with a figure eight, but I have never developed the skills for wicked blade sharpening. M.S. Smith sharpens starting from the tip, which is an improvement. Of course, hand sharpening for most of us will never be as precise, but it can be close. What do you think?

No Japanese culinary knife expert would use one of these systems. I wonder why that is. I dont mind these jigs, they allow a novice sharpener to get pretty decent results with consistency. I've gone the hand sharpening whetstone direction but its got a learning curve for sure.
@afoolishman12
@afoolishman12 5 месяцев назад
Probably because Japanese culinary knifes have fairly soft steel. That style of sharpening takes a looong time with modern steel.

You just don't take into consideration that the majority of Japanese knives do not have thin edges. And those Japanese knives, which are made in the Western style, all without exception have thin edges and even the most experienced Japanese sharpener will not be able to sharpen them correctly and qualitatively better than such a jig.

I have the kme, and honestly, it's a hassle. Trying to clamp it where not only the angle is the same from heal to tip but the same on each side. One side of the knife is always a degree different because the clamp sucks and you have to try to twist the blade and then tighten and hope it doesn't move back up or down since the rubber is so soft. No matter how tight I tighten the blade always has flex. Unless you have a wide blade, but most people are sharpening pocket knives on a kme. Also, the stones are tiny. And the price isn't great. Iv spent 450 dollars on mine so far with the extra stones and an angle cube and strops. As far as the wicked edge, if you would have watched the entire video, he clearly says at the end it isn't on the list bc you have to buy their stones only, there's no aftermarket support, and you can't see what's happening to the bevel as well as the other systems.
@hawktv4508

what about the hapstone R2 or the Edge Pro BevelTech?
@JohnDoeEagle1
@JohnDoeEagle1 9 дней назад
Hard to take any advice or opinions seriously when a Spyderco Sharpmaker, Lansky and/or a Wicked Edge don't get mentioned on a list. They are THE BEST........and you will never get a knife any sharper or easier for cheaper. I never liked traditional wet/whet water or oil stones because they prematurely and unnecessarily wear out your knives relying on creating a burr and apex. You also no matter how steady you are end up changing factory geometry screwing up your knife. When someone insists "this" is the only way to sharpen a knife followed by a bunch of bravado and ego mania just simply blow them off and ignore their opinions. These other style of sharpeners scratch up your knives. They aren't original and knockoff clones of the original Edge Pro sharpeners that really didn't work all that well to begin with. They certainly weren't even constructed all that well either. The Edge Pros reminded me of a science fair project or something someone jerry rigged and fabbed up in their garage. They used wet stones rather than these diamond and made a huge mess with the slurry that found it's way down and into the pivot bearings/bushings and locks.

OK this is the reason why, at the time of filming this video Kme didn't have a 6 inch stone option only 4 inch, lansky only has .5 x4 stones I'm working with then now to develop a more updated system. Spyderco sharp maker is not for reprofiling and I would never recommend someone sharpen thick heavy duty edges with damage on it or anything with damage or that needs reprofiling. Wicked edge while I love what they do seriously and I do recommend them however when it comes to the best their system only allows you to use there stones making them much less versatile than the ones featured. This is the best not the great thank you for watching I hope that makes sense I did mention this at the end of video

@NeevesKnives

You can definitely get very high edge angles, however I don't think that's what you want on that particular model that would make a very small micro bevel that won't be very sharp
@Supertrack238
@Supertrack238 29 дней назад
@@NeevesKnives After revisiting my support email from Emerson, they said it was 30-35, so I guess I can measure the exact angle and go from there, as long as it will go that high. Those blades from the factory are razor-sharp.
@NeevesKnives
@NeevesKnives 29 дней назад
@Supertrack238 I will be honest I wouldn't sharpen that knife at that angle, go 25° it will make the edge much sharper, the edge will last longer, it will be able to strop easier and keep up with in maintenance, and will still hold toughness. Your bevel will be larger but not to big which will be better
@Supertrack238
@Supertrack238 28 дней назад
@@NeevesKnives Thank you. I was just trying to match the factory edge. I really dislike the chisel grind, and have spoken to Ernest Emerson about this. He still holds to keeping the chisel grind on their blades. Question... since I'll be removing a lot of material to change the angle of the grind, do you think sharpening BOTH side of the blade to 20 or 25 would be a good idea?
@NeevesKnives
@NeevesKnives 28 дней назад
@Supertrack238 if you are changing it from chisel to both sides having edge bevel I personally would probably do 17° per side, but you should probably do 20° just to make sure the bevel is not to large after

Great vid for those getting their first system or those that want to upgrade to something better. The cost determines the system of choice for many people. With all the ones shown you can get amazing results on most knives and while there is a learning curve they are much easier than leaning Freehand Sharpening. Patience and attention to detail is big when sharpening so I'd recommend getting a jeweler's loup or some sort of magnifying lens when you start out to get a clear picture of what is happening when you are sharpening and looking for that grit pattern (going from the top of the bevel to the apex of the edge) and burr forming at the apex of the blade. Also a sharpie marker to fill in the edge bevel to ensure you are hitting the correct spot with the angle of the stones. Once you have the blade clamped and edge marked try to set your angle close to the same angle as on the bevel of the knife and do a single pass with your starting sharpening stone.if the stone hits the whole marked bevel with the stone your all set, but If your stone leaves behind the top of the marked bevel marker (Usually black is best for the contrast with a marker and the steel) you must lower the angle, and if its left at the apex (very edge of the blade) you must raise it, make sure to do this in small increments if wishing to match the bevel perfectly. Its a great way to check your progress if you wish to match, raise, or lower the angle you are sharpening as well. Also kapton tape makes it so the blade doesnt take any damage from the clamps when tightening them down onto the blade. Painters tape can be used aleo along with taping off the front of the knife (where blade and handle meet) so metal particals do not get into the pivot and washers or bearings of the knife. Just a few tips on making the systems better. Thanks for the great vid and keep making sharp things fun and enjoyable.

'Cubic Boron Nitride is basically diamond'? No they are not! Why would you say something like that when you know it's not true? Diamond is pure carbon and cubic boron nitride (c-BN) is boron and nitrogen. They don't even share any elements in common and they have very different mechanical properties in shear and tensile stress. The only thing c-BN and diamond really have in common is extremely high hardness.

@NeevesKnives Hey Jared, I want to eventually buy a sharpening system and i'm currently leaning towards the WorkSharp Professional Precision Adjust but the thing holding me back is that idk if it can sharpen recurve blades and especially convexed blades. It probably can't do it out of the box and thats fine but is there any 3rd party parts that will enable it to do it? I like that Tsprof has the convex clamp but the price is hefty so i don't wana go that route if i don't have to. Especially since the Worksharp pro seems perfect for me besides those two functions i want. Thanks in advance for your help!
@NeevesKnives
@NeevesKnives 5 месяцев назад
If you get the stone holder that I mentioned you can get slim stones for recurve but no it won't do convexed edges however you can always just put a grind on the edge but it won't do convexed however tsprof has a convexed attachment
@GeorgeMui
@GeorgeMui 5 месяцев назад
@@NeevesKnives i see, but by putting an edge on it, how does that affect the convexed blade now that it is no longer a zero grind? I like convexed edges because i heard the geometry makes a knife super tough while still retaining sliceyness even though theres alot of steel behind the edge still. Also the Tsprof attachment can achieve this because it comes with a curved rod?
@NeevesKnives
@NeevesKnives 5 месяцев назад
@@GeorgeMui tsprof has a part you put on in order for the rod to curve while moving. a convexed grind with a vgrind edge is just fine, yes convex edges are touhger, v are sharper but blade geometry is a huge part your knife is mostly already ground thick so you should be fine depending on what angle you sharpened at is this a fixed blade or folder

The Hapstone RS with the new Hapstone Upgrades (Linear Bearing Stone Holder, Ball Scew Vertical Angle Ajustment Upgrade, and finally the new Compact CenterJaw Clamps) make the Hapstone every bit as good as the TSPROF. It will cost you about $450 total, but its every bit as good, and well consructed as the TSPROF and it comes in a WAY smaller foot print and size. AND THE TSPROF KADET PRO is not $500 bro. Maybe thats what it costs for YOU, but its well over $700+ for anyone else to buy. Not to mention shipping and tax and duties etc. TSPROF is expensive as fugggggggg

@@NeevesKnives In what way is a stone sharpened edge better? Just curious what I should be looking for. I use the Ken onion and the Precision Pro and I don’t see a difference in edge performance. Probably user error but it would be helpful to know what to look for as well. Debating if it’s worth keeping the Precision Pro :/, given the price difference in the systems I thought the difference would be immediately apparent. I recently watched Work Sharp’s RU-vid video and even in their sharpness tests (including edge-on-up tests) it seems to be a toss up. Which again given the price difference is disappointing. Does the KO3 give a much better edge than the Precision Pro or does it just provide a better user experience?

@hawktv4508 5 месяцев назад
I just got a k03 and I had both precision adjusts. Pro is better than the original and the K03 does just make that much better of an edge. It’s a lot better in my opinion. I have a Ken onion with no attachments and I rounded the tip on several knives and have never used it sense so I can’t add on that. You can get. Sharp edge with any of them but the overall outcome is better with the K03. If you are pleased with your edges then don’t spend the extra money.

@@hawktv4508 Thanks for the info. I think a lot of people that round the tips with the Ken onion pull the knife all the way through. Digital angle finders are what I consider useless accessories. Think about it. If your sharpener is on a table, even if the table is tilted 45 degrees, the angle that matters is the one between the tool base and the tool arm. I've never seen a fixed angle sharpening system that doesn't have some type of markings on the unit itself and that is really all you need. Most of my knives are pocket knives and about 95% of them get sharpened to 17 degrees. I rarely try to match factory angles as they are usually a compromise and differ from what works for me. I'm all about set it and forget it, to the point I bought a second system that I do adjust just for kitchen knives and really thick stock fixed blades and folders. Works for me.
