There are so many royal icing consistencies it's hard to know how to make them AND what to use them for. Ever wonder when to use each of my 5 main consistencies? Well here is a compilation of them all!
**Note: you can use a medium peak instead for a lot of the stiff peak applications in the video! (that's what I tend to do these days)

My 5 main consistencies from thickest to thinnest are:
PIPING:
1. Stiff peak piping (flowers)
2. Medium peak piping (outline, detail piping that needs to maintain texture)
3. Soft peak piping (outline, lettering, detail, line work)
FLOOD:
4. Thick flood (one consistency outline/flood)
--- plus: extra thick flood (minis)
5. Thin flood (two consistency outline/flood)
--- plus: extra thin flood (for lots of wet on wet technique)
