I think the thing with Tina is, kitchens can be extremely toxic and misogynistic, harassment is very much a thing, and she's been a woman in the kitchen since forever. Being a hardass is a way to defend yourself in a situation like that. Combine that and the fact that she doesn't have the culinary education Sydney has, and you have a person whose defense mechanism is, well, attacking, and who's feeling threatened. I don't like the way she acted but I understand why she did it.
