Here is a special Fogo Test! I wanted to improved my BBQ rib skills, so I asked a couple of our Ambassadors to fill me in on their tips to make the best baby back ribs! What’s the secret to mouthwatering, tender rack of ribs? I had to find out!
I craved ribs so much that I tried both tips at the same time! I wanted to and find out which way of cooking ribs is best! After a little over 4 hours, the results were in. Check out and see what came out of this long, smokey, double experiment.
Spoiler alert: In both cases, the ribs tasted just as good as they looked! Glazed, sweet, spicy… Finger-licking good.
For that extra contrast between sweet and salty, mild and spicy kick... try the added sugar and the apple juice! It tasted amazing.
Practice makes perfect! And I love a good rack of ribs. Send me other ideas so I can put them to another Fogo Test!

Great job buddy, I never heard of 2,2,1 method I am familiar with the 3,2,1 method but we live and learn every day 😉. Wrapping the ribs will for sure come out more tender but again I never done a side by side comparison. Might test this out myself. Great job on this cook.

Baby Back ribs is a bit shorter than St. Louis style (bigger, meatier ribs). That's the difference :) Thanks!

what Fogo said. 3-2-1 is for spares, 2-2-1 is for baby backs (remember this is just a general rule as individual cuts of meat are different)

Well done, chef. I've always done 3-2-1, found them to be juiciest and most tender. However, I felt like the 4-1/no wrap method produced a more consistent/competition style of a bite. May have to try it that way on my next smoke. Cheers!

Really appreciate it! Yes, the rub is: This is what I used this for the Rub: 2 tbsp salt 2 tbsp sugar 1 tbsp (smoked) paprika 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp cayenne pepper

2 2 1 is good for comp but if you want fall off the bones ribs go with a longer cook.
