I honestly think you are one of the best vegan chefs on RU-vid. I can just tell you’ve perfected your recipes. I hope you open up your own restaurant, cafe or online store one day.
Get the recipe for these muffins! rainbowplantlife.com/vegan-blueberry-muffins/ PS: we also tested these with a gluten-free option, and they actually work well!
I love how you mention how many times you tested a recipe. It gives me confidence to trust the recipe, knowing it's been perfected to the T. 👌 Thanks Nisha, u rock! 🙌
Just dust any fillings such as nuts, berries or candied fruit in flour before mixing into any batter and it will stay exactly where you mixed it into the batter when baking, without sinking to the bottom 😊
I've heard that tip a lot and tried it in my testing. It doesn't work. Serious Eats even did an article debunking this idea if you care enough to google it.
I’ve made these a few times and they are hands down the best muffins I’ve made at home! Tried gluten free once too and they also turned out delicious. 😋
Was just wondering how they would be as a gluten free version, good to hear they turned out well...will give them a go myself. Thanks for sharing this info. 😊
@@tropicallyfit the written recipe in the blog has the details for a gluten free alternative! 😊 But yeah, it was part oat flour and part gluten free all-purpose flour 🙏
I don't have flaxseed but I ground some chia seed and let it soaked in water for 10 minutes and the consistency is similar to flaxseed meal, just have to scoop 1 tablespoon-1.5 more than what is called for as chia seed eats water like crazy
I can confirm they are really good and tasty! But I greased my baking form with margarine instead of spray and my muffins came out a bit sticky to the outside but completely baked. It's either that or I need to tweak and adjust my oven temperature because every oven is a bit different, especially smaller ones as in my case.
Thanks for sharing this delicious looking muffin recipe, your website looks great to so many amazing selections of food. Will be trying out some of those too. 😊
So many folks hear “vegan” baked good and think “gross!” Most vegan baked goods are actually more moist and flavorful than traditional! Unfortunately, the same cannot be said for gluten-free!😢
Nisha do you have any suggestions on how to make this if you’re a celiac? I know it kind of messes with the recipe since you specify that the lemon juice interacts with the gluten
I second the chia egg, but if you don't have chia some unsweetened apple sauce or mashed banana will also work. They might turn out a bit denser but they'll taste just as good!
I’m m not great at knowing where to find things so I can’t find the recipe for these muffins - I need measurements of the ingredients. Where can I get the recipe from?
The vegan buttermilk is not a separate ingredient, it's the oat milk + lemon juice from earlier in the video If you don't have oat milk almond or soy will work just as well from my experience 😊
look at the recipe, its linked in the comments! the things you're asking about vary based on your particular ingredients, so just calculate based on what you use! most recipes do come with estimates based on what the creator used, but its always subject to what you use! happy baking!
