I am a huge fan of rice crispy treats, but I am also super picky about them. If people add vanilla or cook them too long or skimp on the marshmallows I will most likely not eat them. These ones, well these ones I can eat a dozen or more.

Recipe
1 stick of butter
6c. rice crispy cereal
16 oz. mini marshmallows divided
In a large pan on medium high heat melt the butter. Stir it consistently until it starts to get little brown bits in it. You need to watch it or it can burn. Once you have a decent amount of brown in the butter turn your heat to low. Add 6c. of mini marshmallows. Stir this until it starts to melt but do not overheat this or the cookies will be crunchy Add your rice crispy cereal and stir until incorporated. Add 2 more cups of mini marshmallows and give it a little stir just until they are mixed in but not melted.
Grease a 9x13 pan and dump the mix into the pan. Grease your hands and gently press down on the mix until it is even on the top. Do not press down too far or this will cause them to get crunchy.
Let them cool.
Cut and enjoy.
