Shopping List:
1.5 lbs ground beef
corn or flour tortillas
1 onion
1 jalapeno
1/4 cup diced cilantro
1 tbsp avocado oil
1 tsp each chile powder, cumin, ancho chile, smoked paprika (more to taste)
salt, pepper, garlic, onion powder, dried oregano
2 cloves garlic (minced)
1 tbsp tomato paste
2-3 tbsps flour
15 oz tomato sauce
2 cups chicken stock
1.5 cup shredded monterey jack
1.5 cups cheddar cheese

Using flower tortillas is a burrito. Using corn tortillas are enchiladas. Maybe a burritadas. 😂 looks good though 👌🏽

Would love to see how you pull these out of the baking dish so the plating looks so clean. Are you using a spatula or tongs? My tortillas tend to break apart too easily.

I must say that I’ve never seen enchilada sauce made with tomato sauce. I’ve only ever seen it made with making a roux and then adding chili powder and then water or chicken broth however it seems like it would taste much better with tomato sauce. I’m going to have to give this a try this weekend. Thank you for showing me a new way of doing it. I cannot wait to try this!

You wrong for this man! Got my taste buds waking up at midnight while I'm trying to get to bed. I'll definitely be trying this with some adjustments on the ingredients only because my son hates onions and mom can't take the heat! I eat it all!! Great video. I just want to say this is an excellent recipe for enchiladas .. The meat prepared this way can also be used for tacos, you just have to cook the sauce down a little more so ur tacos aren't too runny ❤️. Trust.. I did it, it's great 😊. Thanks Matt for sharing your great food IQ

I was extremely intimidated when I immediately saw the beginning of video , but once I started watching the ingredients as well as your personality, intrigued me so I gave it a shot. Ancho chilis is a must for enchilada sauce. This doesn't have that authentic flavor but it looks decent.

I love all of this! Except one thing. I'm from NM. We'd never use tomato in enchiladas. I'll grant that may well be a NM thing. I'm curious your thought on using a red chili sauce instead of tomato paste though? And yes, corn tortillas too. Maybe with an egg on top?

He is just showing us different ways to do recipes, doesn’t always have to be too traditional, some people are allergic too certain things like Chili sauce or don’t like certain things! I don’t like corn tortillas, so someone showing us a recipe without corn tortillas helps people like me out!! It’s just good to do things differently sometimes that’s all🤷🏽‍♀️
