I love how I stop everything I'm doing and watch once I see there's a new episode out with Lucas. This show will never get old.

I like chili with beans. I grew up kinda poor with immigrant parents from soviet bloc upbringing, so they raised me to take what I can get. Seasoned American food took some getting used to, and spicy dishes even longer. When I moved to Denver, the ubiquitous smothered green chili was a culture shock, but i learned to enjoy it. I'm a born and bred New Englander. When I got my first apartment I would buy dented Hormel chili cans on clearance at the Big Y I could walk up the hill to and use free vending machine sized Fritos bags from work as salty scoops. I'm glad I wasn't too far off the mark. Chili really isn't a cultural thing up here in the northeast. I'd dump a can of black beans or kidney beans in the Hormel to extend it, and grew to prefer it that way. I also have a soft spot for Spaghetti-O's and that brick of frozen Tina's bean and cheese burritos.

I used to work with a butcher from Texas. he was the quintessential Texan. About 6 foot tall and maybe 375 pounds. His name was Tiny. He introduced me to Texas chili. Beef, chopped course, and spices. Cooked slow in a countertop roasting oven. Like a large slow cooker. No tomato. No beans. Maybe onions and garlic...and spices.

Dark chocolate, rich porter beer and coffee are great ingredients i chili but not necesserily all combined. Try it!

Theres a few hipotesis of the dish, one that i find very intresting its that when the México-U.S.A war ended, back when the border was moved and the prehispanic cuisine got cought within it, and a ethic dish "chile con carne" , that i belive it is still in some tribes, which it was hot peppers, meat, tomatoes , onions and cane sugar (allegedly), was adopted by the texans. Some added the beans because the mexican culture was already cought in the middle and the dish have the quality of a very long life spam, also can take a lot of re heatings so it was a proper dish well recived by any hungre mexican or texan cowboy. to be honest i do enjoy it with the beans, but not with the cheese nor crackers, just a hot bowl of it with a spoon in a cold day:). So in a way the texans may just kept and develop the pre hispanic recepie and the mexicans we adopted the bean and meat (or sausage...) recepie.
