Ingredients:
- 2 Large egg whites
- 60g Sugar (⅓ cup)
- Pinch of salt
- 1 Tsp Vanilla extract
- 140g Desiccated coconut (2 Cups)
Instructions:
1. In a large bowl, put 2 egg whites and start whisking them. When they start to be very foamy, gradually add 60g Sugar (⅓ cup) on top while continuing to whisk
2. Add a Pinch of salt, 1 Tsp Vanilla extract and Keep whisking
3. Now add 140g Desiccated coconut (2 Cups) and gently incorporate it using a spatula
4. Scoop the mixture onto a baking tray lined with parchment paper, using ice cream scoop
5. Bake in a preheated oven at 175ºC-350ºF for 15-20 minutes until golden brown and Remove from the oven and leave to cool completely on a rack
6. dip the bottom of each cooled macaroon into the chocolate and wipe off any excess. Arrange on a sheet of baking parchment, chocolate-side up
7. You can use any remaining melted chocolate to pipe in zigzags over the top, if you like, then leave to set.
