the custard
ingredients:
500 ml whole milk (If you want you can also make 250 milk and 250 g whipping cream)
150 g granulated sugar
5 egg yolks
30 gr of cornstarch or rice starch
a Bourbon vanilla pod measuring 16/18 cm
or lemon peel.
Advice : Avoid vanillin and other chemical flavourings....always use natural products.
Bring the milk to the boil with 75 g of sugar and a Bourbon vanilla bean, in a bull's-eye bowl combine the yolks with the remaining 75 g of sugar and also add 40 g of cornstarch, then mix until you obtain a homogeneous mixture. When the milk is very hot, add one part to the mixture with the yolks and mix well. Now add all the mixture, put on the fire and bring to a simmer. your cream is ready, now you have to put a film in contact and let it cool in the fridge. keep at a temperature not higher than 4 degrees. It can be kept for a maximum of 2/3 days.
