Been growing and eating brussel sprouts for 40 years I've never heard of anyone cutting out the woody edge "core" ever in my life until this year on youtube I've come across it several times. Anyone cutting that out on every tiny little brussel sprout is just bat shit crazy

I really, really wanna try to make these, they look absolutely delicious! Brussel sprouts are one of my favorite vegetables along with Asparagus and Broccoli..I'm going to try and make 'em..they just look too yummy. Wish me luck!

Steve, glad to see the redo on the Brussels Sprouts! They are a much maligned brassica but packed with nutrition and flavor when done right. If you are tearing up when slicing your shallots, you probably need to sharpen your knife. You should look into recycling your spent oil. It still has a lot of life in it. Biodiesel would take it or at least call your waste management district for their suggestion. The oil can really mess up a landfill, not to mention groundwater and aquifers. A little tip on the frying, get an induction hob (or other portable burner, but induction is the best) and do the frying outside if you can. Thanks again for the reference to the Thermador range. Just did Sprouts in my video from lastnight, great stuff. Similar cook. I didn't deep fry but used bacon and mushrooms. Nice idea with the Agave, how about honey? Cheers!

Hey! Been following your channel for half a year or so and I really enjoy your videos. I really like the laid back feel and just the atmosphere of the videos (and the food, obviously). One annoyance, however, has always been the sound editing, the fact that the music immediately drops down or goes up when you're about to start or when you stop talking. It always becomes a jarring jump, and I think you could improve this quite easily by just changing the music volume gradually instead of immediately. Anyway, thanks for the good content and Merry Christmas!

10:14 on timing, I think you can reserve the bacon then use the bacon fat to cook the shallots properly, then add the bacon back

How far ahead could you make this in advanced? Can you pre-fry the brussel sprouts, and then before serving toss with hot bacon fat/agave? Or will it dry out? Should we re-fry it before tossing with bacon??? what to do? this looks so good. :)

I can't believe no one jumped in and gave tip before frying! Heat up Brussel sprouts in microwave. Then towel dry! Ready for fryer. Going to fry mine out side though just in case.

Gave this a shot yesterday and the flavor was great. Won't get a chance to experiment again before xmas, so want to see if you have any last minute tips. If it came out on the oily side, where do you think I should be adjusting for next time? Less bacon, less butter?

When cutting any onion, keep the root on as long as possible before cutting it off. When you cut it off it releases the tear gas.

2:50 Wow! -do sjalots really get you that bad? -I feel for you. Dang, I usually have to blow my nose after cutting up onions or sjalots, but I, usually, don't actually cry... and I need to wear glasses for accuracy, which is supposed to make things worse. Tell you what got me, though: over here we get these intermediate sized onions (in between silverskin and regular onions), called "sauce" onions (onions sauciers; also used to make pickled onions) and I found out the hard way why these are almost universally used whole, when I decided to substitute those for sjalots I didn't have. Holy mackerel, Batman. As a Belgian army reserve, I hold chopping those up is equivalent to being directly exposed to CS gas. So, whatever you do, steer clear of chopping those bad boys up, if sjalots already do that to you.

Considering what blue agave nectar is which is Fructose & glucose syrup with a high fructose to glucose ratio (approx 60% to 20%) and the small amount used you could use practically any other sugar syrup with high fructose to glucose ratio or even just use plain sugar although in that case you'd have to add more because fructose is 1.73x sweeter than glucose. In other words... it's just sugar and such a small amount it really doesn't matter very much.

Pro tip: put onions in the fridge before you cut them. Cutting cold onions doesn't make your eyes tear.

They aren’t cheap knives, they are inexpensive. I won’t use them forever, actually talking with a knife shop right now, however it’s been important to me to start this show using tools that didn’t seem too high end. When someone asked me what knife I use I didn’t want to tell them some 150 dollar knife, which I have, I just intentionally don’t use them.
