What flour did you use because I've never seen GF yeasted dough behave like that without psyllium husk added.

Thanks for your comment! I used Caputo Gluten-Free Flour for this recipe. It works really well for GF yeast doughs without needing psyllium husk. Give it a try; it's excellent for donuts! The link is now added to the description.
