As you all know, I love to make my own plant milk at home and have published several recipes. One that has been missing is soy milk because I needed some time to try several things to eliminate the beany taste that many recipes have. Today I'm sharing what works for me and what I like best.
This homemade plant milk is casein free, high in protein and low in fat. My tutorial guides you through the steps for making soy milk in a high speed blender. This dairy free, nut free and lactose free milk is compatible with a high carb low fat (HCLF) vegan diet, also known as Whole Foods Plant Based (WFPB), as suggested by T. Colin Campbell's "The China Study" and Dr. Michael Greger's Nutritionfacts.org. If you're interested in healthy nutrition, give it a try! Soy milk is a staple in Chinese and Japanese cuisine and can be used in coffee, for vegan baking, in vegan milk shakes and much more.

● 1 cup dry soy beans
● 6 cups boiling water
● 6 cups cold water for cooking
● optional: sweetener (agave nector or maple syrup)
Method: Fill the soy beans into a pot and cover them with 6 cups boiling water. Once the water has cooled down, store the pot in the fridge for one day and let the beans soak. One day later, strain and rinse the beans.
Fill the beans and the 6 cups of water into your high speed blender (I do this in two parts as my blender isn't too big). Blend for two minutes, then pulse to release particles from the walls of the blender. Blend for another two minutes. Line a strainer with a cheese cloth or laundry mesh wash bag. Pour the liquid into the strainer. Close and twist the cheese cloth / wash bag and squeeze out as much liquid as possible. The pulp that remains is called Okara and can be used to make vegan burger patties or bread.
Cook the soy milk for two hours on low heat with the lid closed. Stir frequently. Let the soy milk cool down (or use it right away if you want to enjoy some vegan hot chocolate).

Thank you so much! I love making soy milk, but mine was also VERY beanie in flavor. I will try your suggestions. I'm looking forward to it as I make my own soy yogurt too. I found that making it with the whey from the previous version makes a much milder soy yogurt and the beanie taste almost goes entirely away. However I want to drink the soy milk but can't if it is too strong so I'm excited about your video and plan on making it as soon as possible. Thanks for sharing.

@@viviantruong8708soy milk needs to boil on a very low flame because otherwise it will foam up and also burn on the bottom. A pressure cooker will exacerbate both the foaming action and the burning on the bottom, even if the pot is non stick.

So - I heated for 2 hours - slightly bitter and a drying taste left over - I kept it on low per the directions - should it have been heated at a higher temp for 2 hours? Should the bean covers be removed? haha Im on my 10 batch and still not working great - although your method MUCH better than others so far - aiming to make greek style yogurt as an end product:)

It sounds like you did everything right. I never remove the bean covers. Maybe try using a different brand of soy beans? A lot of people say it makes a difference.

So after covering them in boiling water you say you let them cool before putting them in the fridge. How do you let them cool? Do you just leave them in the counter and for how long before putting them in the fridge? I want to try this soaking with boiling water for black beans and see if it gives them a better flavor. Yes, leave it on the counter until it reaches room temperature (approximately 2 hrs).

Back in 2021 when I made the video I still used tap water. I now only use home distilled and filtered water (I have a Vevor distiller with a charcoal filter) because it's the cleanest and purest water that one can drink.

Yes, some people use it for homemade vegan cheese (just google okara cheese)

I never use a thermometer, I think 80-85C (175-185F) would be good

Thank you for you good directions. But it didn’t work for me. Mine came out so bitter….. again. I’ve been trying different people’s ways of making soy milk and it always comes out bitter… even adding sugar doesn’t help. Thanks anyway…

Maybe try a different brand of soybeans? Mine are from a packaging free store, so I can't recommend a specific brand but lots of people say they like Laura soybeans (available online)

Yes, i had the same problem I bought 25 bag of beans. Also go on line and see how long the shelf life of the beans are and how to store them

I make almond milk all the time, now I haven't made soy, hence my watching this video. I sweeten my almond milk with dates. Maybe that would help the bitterness of the soy milk. I also add vanilla
