SO many things I have learned since shooting my first ever Ice Cream RU-vid video. This recipe is just as creamy, soft and scoopable (even after weeks in the freezer) but even lower carb than the original. My go to recipe that I have adapted into so many variations over the years.

Vanilla Bean Ice Cream Ingredients
1 1/4 Cup Heavy Cream (can use silk)
1 1/4 Cup Unsweetened Milk of choice (I like so delicious coconut milk or cashew)
1/2 Cup-3/4 Cup 80-120g Allulose
2 Tbs. 24 g Erythritol based sweetener (I like gold monkfruit/erythritol)
1 Egg
1 Vanilla Bean (optional)
1/2 Tbs. Cold Water
1/2 tsp. Gelatin (alternative gum will work just may need a different amount)
1 tsp. Vanilla Extract (more to taste)
1 tsp Vanilla Stevia (optional, to taste)
Macros: 2/3 Cup using allulose (xylitol has calories) and so delicious coconut milk
160 Calories
16 g Fat
5 g Total Carbs
0g Fiber
3 g Sugar Alcohol
2 g Net Carbs
2 g Protein

I used to do keto and still attempting to have the sweet treats. It ended up diverting me because of the continued cravings. I found that lion diet helped to shut the cravings off. Easier food choices. I believe at least 60 days of lion diet is a good experience for anyone with sweet struggles. Gets you completely away from the idea of needing sweets. Fat and protein is very satisfying.

Good for you, I'm glad you were able to do that! But sweets are my life, literally MY JOB so I can't, won't and don't want to give it up. It's been my life passion since I was 18 and went to pastry school. I figured out recipes out of necessity because I will never keep the weight off without alternatives.

SO great to see You back up to recipes Grrrl!! Been missin' that lots!! I use 4-6 eggs per 1 can of coconut milk with 1 c same boxed coconut milk You used per batch of ice cream. I also use 2 scoops of flavored collagen or 1/3 c plain collagen, 1T of gelatin then at end add 1 t acacia fiber & 1/4 t guar gum; makes like a pudding pop kinda style of ice cream bar. YUMMY!! Maria Emmerich says add a 1/2 t salt & 1/2 t baking soda to keep it soft... I always add salt but haven't tried the soda yet. ?? I pasturize all my eggs at once to 160° first for 3 batches of ice cream & a triple batch of mayo & get that all out of the way. As I make both things in the blender, I don't worry about any egg bits 😍🏆💎🎉 WIN/WIN You inspire me to be better!! Thank You & more blessings upon You & Yours!!

You know Alicia, you can actually make regular milk without the carbs, that is mix cream with water 10%cream - 90% water ratio is like milk.

It's true! Finally a keto ice cream that remains scoopable right out of the freezer! Thank you Alycia! You are brilliant. My non-keto 20-year old son absolutely loves it too. He is always very skeptical of keto treats, but he eats really healthy and avoids all refined sugar, so he is really really happy!

Oh my gosh. I am blown away over this ice cream. I've never made it before so this was my first attempt. I bought a small Dash cream maker off Amazon and it was impressive. I just made vanilla ice cream using your recipe sans the eggs, as I stated in my previous comment, I'm an impatient lazy cook.😂 The gelatin puck, allulose made all the difference. I could literally feel the creaminess after I took it out of my Cuisinart. I also gilded the lily with the mixture by setting it in an ice bath and putting it in the fridge for about 1 hr 45min for a temp of 37°. You are the greatest, lady!!!😁. Keep doing what you're doing.😁🍨🍦❤

I did a really easy recipe I saw online, just cream, allulose and vanilla, and white rum, and it was very soft, and delicious

Yeah allulose keeps it soft. The so delicious coconut milk lowers the carbs but the gelatin and churning it makes it nice and creamy still. And adding eggs ups the protein but like I said in the video, are optional. A cup of cream is 6-7g net carbs.

Oh, honey, the "first time" is always a hot mess. It takes the first time to realize just how much we really don't know what we're doing 🤭 I couldn't help myself, everytime somebody mentions their "first time" of doing anything and it being a spectacular failure with the benefit of experience to look back upon it, my mind goes there 😅 Seriously though, your ice cream recipes are just delicious. I wonder if egg yolk powder would work instead of breaking eggs? I find I like egg yolks in homemade ice cream but eggs are still too expensive to be wasting the egg white. Edited to add: This is much better than the first one. I didn't realize I wasn't tempering right.

You're welcome!!! I've made a lemon but haven't made a video, I used left over lemon bars in it!!. And I do have a peppermint mocha ice cream recipe, can just leave out the mint extract. Also the caramel macchiato ice cream bars would be just as delicious without the caramel and it would be chocolate coated coffee ice cream.

Made this tonight and mixed the cream with unsweetened almond milk and unsweetened vanilla macadamia milk. The 1/2 cup Allulose was perfect for us, with the additional sweeteners you call for. Agreed no one would know…the hubs said it took him back to childhood sitting on his grandpa’s porch. Thanks!!

I love your channel, Alicia, your ice cream looks SUPER YUMMY!!! Let me ask though; if you don't want to do the custard(I did do the custard for my first attempt at butter pecan ice cream, and it was DELISH, but it was so time consuming, I need a short cut for soft scoopible ice cream; I'm a lazy cook😛), can I just use allulose and tara gum?

Thanks, I said in the video you don't have to use eggs and also don't have to cook it again if you don't want to. For myself I just churn it once it's cool after just tempering the eggs. It's technically the same as if you eat runny yolks, same risk as long as you are not pregnant, old (in poor health) or a child you should be fine. Just follow the recipe without egg if you don't want to use them.

Thanks! A mixer won't freeze as it mixes because it's not cold on the outside. The only way that would work would be if you have liquid nitrogen to pour into the mixer. If you can't get a new ice cream churner I always suggest thrift stores, estate sales and garage sale. But if you just put the base in the freezer and stir it every 20 minutes it will be decent. I think that would be fine but I believe it is way more carbs. This box coconut milk is only 1 carb per cup.

Just an fyi, heavy cream has 8g carbs per cup. The fda allows manufacturers to label their products as 0 carb if the serving size has less than a carb, so your recipe here has way more carbs than you think. Reconstituted heavy cream from Anthony's heavy cream powder has 4g carbs per cup and thats what i tend to use if i need heavy cream for something. Loved your recipe with my own substitutes tho, thank you!

I look up my counts on several sites and they all concur that 1 cup of heavy cream is 6 carbs. My site I pay for to do my recipes and counts also has 6 grams per 1 cup. Also 2 1/2 cups of base makes 5 cups of ice cream, so even if there is 4 extra carbs, there are 6 servings so it wouldn't be an extra carb per 2/3 Cup.

I like to use sodium alginate in my icecream as a gelling/ thickening agent, it is also great in gravy. Have you seen sodium alginate and calcium lactate used to make pasta? I do the hardboiled eggs recipe from Keto Asian Flavours and is the best pasta I have tasted. I have used your other recipe for icecream but will give this a go too it looks delicious, I am still looking at Macaron recipes. LOL it is doing my head in I made meringue with allulose and it didn't set in the end I put it in the freezer it was like taffy, wouldn't set or even freeze in the freezer either! Very strange!

I've seen the recipes, haven't tried them, just don't have enough time. Yeah allulose is a strange beast. Works so great in many applications but can't get it to do what you want for other things. Still haven't figured out a good way to do meringues. I've made a kind of meringue for a "marshmallow" dip but it weeps so quickly. And yeah to bake them allulose doesn't work at all everything stays flimsy. But that's why I use allulose in my nougat recipe, stays chewy in the fridge, gets rock hard in the freezer.

Ok, getting ready to give this a go but quick question, is the basic quantities designed for a 6 cup / 1.5 quart yield? That is what my ice cream makers max quantity is and it looks like a double recipe woukd fit but does it “swell” when churned? Thanks! :-)

THE CUSTARD: For the custard I notice you use egg whites, not just the yolks. May I ask why? How does the white impact the custard ?

Doesn't make a difference. You can use just egg yolks also, I just like to use the whole egg so I don't have a ton more whites cause I always have so many.

Most people like my keto recipes because they contain less oxalates because I don't use almond flour. I don't use almond or soy milk either. So not sure which oxalates you are referring to in my keto recipes.

I have a no churn recipe I use for popsicles that is delicious. I also have a fudgesicle recipe that is basically my chocolate pudding recipe frozen. It will probably be a little icy tasting if you want to freeze them. I feel like you may need more gelatin. Maybe try to modify my fudgesicle with no coca powder, that would probably be good.

One other question, usually a custard would just use the egg yolks. Do you think it would be better to just use the yolks as opposed to the whole egg?

You can use whatever you want for eggs I just always have too many egg whites leftover from all my recipes to add even more from this.

Thanks for the reply! I totally get that, there is a keto no-cauliflower “ mashed potatoes” recipe floating around the Interwebs right now that people are raving about which might be a great way to use up some of those extra egg whites. :-)

I realize you're asking Alycia, but yes. This would be considered a frozen custard. I'm old enough to remember when ice cream was commonly made with eggs though. I think commercial production figured out a cheaper way.

Ice cream looks very delicious but that's a lot of work and I don't have an ice cream machine anyway so I will try and find an easier way to find something that'll be a little easier for me to enjoy as Keto

Does anyone have an idea how I might use this as a base for wild blueberry ice cream, using frozen wild blueberries? I assume I'd cook a certain amount of blueberries, with a little allulose and maybe a pinch of Citric acid or lemon juice, but I'm not sure what amounts might work.

You can always reference my other ice cream videos i have over a dozen in a playlist. I've done a strawberry rhubarb pie ice cream where i just added a rhubarb jam and it turned out perfect. I also have a jam recipe video. Hope that helps and I'm sure that will be delicious!

I don’t get the erythritol. It doesn’t want to melt, then my ice cream is grainy. What can I do?

I'm not sure, I use a monkfruit/erythritol blend and it melts. You don't want to boil because then it will crystalize when it cools. So maybe you are heating too much? If that's not it then use a powdered erythritol.

I tried, it was too hard still, it didn't fluff up like it was suppose to. I'm not sure why it didn't work, thought for sure it would. Maybe I used it wrong, I used one that had no directions with it.

Yeah I'm making a batch for my commercial ice cream maker. This big batch won't fit in a normal ice cream maker so I gave you the recipe to fit in a regular ice cream maker.

Thanks, you can use any ice cream maker. The recipe amounts are for a normal kitchen aide ice cream maker. Many times you can find cuisinart ones at goodwill or other second hand stores.

If your lactase persistent 100% grassfed whole milk is the best choice. Remember 35% of the human population is lactase persistent we get all the benefits and none of the drawbacks from dairy products. Lactase persistent people digest dairy products in the small intestine, where ALL animal sourced foods are digested. Lactose intolerant people digest milk in the large intestine, and it's why you are subject to problems with dairy.

@@doesnotFempute Keto has a 50g limit. If sugar in milk was a problem why are babies in ketosis? Human milk has 17 grams of sugar. You seem to fail to grasp the concept of lactase persistence, and being able to consume dairy, and getting ALL of the benefits and none of the drawbacks. It is precisely why it is considered to be an evolutionary advantage. What is even more interesting, even though 35% of the population have this, the allelic expression related to lactase persistence is behaving like a dominant trait.
