Super helpful. I have 10 quarts of fresh garlic bulbs and am searching for ways to preserve simply. It’s going to be time consuming peeling it all but so glad I found a sound way to preserve it, thank you

The method where you put the garlic cloves in a hard container like glass or metal or Tupperware and shake them hard to remove the peels works pretty well. Thanks for watching!

I actually did the freezer method on a whim because i had made so much. Turns out its a good thing yay! I actually like the minced garlic in the freezer i feel like it has a stronger taste than if i did fresh.

As a garlic lover (I can eat it raw 😂) I'm obsessed with this video and love how scientific you got with it! My parents are restaurant owners so I grew up always having the minced garlic ready in the fridge. They would bring it from work. I've always wondered how h-mart had those too - I thought they added some preservatives haha So interesting to learn about allicin!

Thks a lot never never was able to keep garlic for too long Would normally store it at room temp, but after awhile the garlic would start to grow those nasty green stems inside so it wouldn’t stay fresh for long Which meant I had to always buy small amounts and would constantly be running out and that’s fustriating I would see those bags of pealed garlic at Costco and would always think you have to be in the food business to buy that and use it all before it would go bad So ya thanks a bunch for posting this video it’s a life saver, I subscribed to you channel and now will be trying out some of the food meals you posted👍👍👍👍👍

i had some leftover minced garlic that i added to a container with some oil like other people say it should be stored, 4 days later i pull it out the fridge and its moldy, like actual green color. I was so pissed I found this video and now I will test it.

Ok, I subscribed. Now, change your title. This is so important. I've looked and looked for this answer. Nowhere could I find this. Put something in your title to get everyone's attention. @@Chow-House I went through the list of preserving garlic to see what others titled. No, I don't see how it can be changed. I've already recommended your vid on a couple other videos. Your video is perfect I would not change anything about it. I wish I had seen your video long before I watched others. Too bad you can't use a neon sign to grab attention. Maybe consider adding BREAKING NEW; or I seen where someone used the word HACK; Like NEW WAY TO PRESERVE MINCED GARLIC HACK. That's all I can think of. But seriously your video was the first that had any real information that is safe without altering the garlic flavor with a bunch of preserves. Thank you

Ya know you already have THE BEST in your title, I wouldn't change it. Your vid is only 2 months old, I think it will pick up and do great. A lot of people have started harvesting and storing food. So throughout fall and winter I know you'll get a lot more views. My opinion is I would have preferred your vid was number one, at the top of the list. Because after watching yours I would have looked at a few more just to see and compare. But there really isn't any other like yours. Your vid is THE BEST!!

I am tired of moldy frig garlic. And keeping it in oil, vinegar, and salt seems a bit disgusting. I'm going to try this on a smaller scale. Thank you for figuring this out.

You're welcome! It has worked well for us. For ginger I recommend freezing knobs/thumbs of ginger in the freezer and then using a microplane or small grater to grate the ginger while it is still frozen. I haven't tried this garlic method with ginger yet.

No oil is needed. It's actually better to store it without oil! Just plain garlic and it keeps well in the fridge after being frozen.

I'm new to garlic growing. I grew soft neck instead of hard neck. I'm getting ready to pull it all. They are not beautiful some splitting and a nuce skin has not formed but still good to eat. Can I pull it and freeze it

Thank you for sharing this video ! 🎉 I wanna ask, is it okay if after i minced my garlic, store it in a airtight jar, put it straight in my chiller and skip the frozen process? Idk, i've been doing this for almost a year and the garlic always looks good to use for up to 2 - 3 weeks. But idk if it's really safe for our health. Thank youu *Cause i find it really unconvenient if i froze it, like... I need to wait it defrost and it takes so much time. That's why i never froze it 🥲🥲

You're welcome! I think it's ok to skip the freezing process but I think the freezing process just makes it last longer than 2-3 weeks in my experience. We freeze a lot of minced garlic at one time and just keep it in the freezer until we're ready to thaw and use another container. As always, use your gut and senses to see if something is safe to eat or not.

hello :) quick question cause it kind of confusing. So, should I crush it first then put it on the food processor or just put it in the food processor right away after cutting the end(since it will be minced anyway)? {because at 5:06 the knowledge is said when you minced or crush}. Or maybe it means the same thing since allicin is created anyway?

The main factor is the freezing. The most botulism bacteria come from the soil and not air so when you freeze it it becomes sterile. When you open a container and put it in the fridge the other factors you mentioned come into play. I wonder how freezing in oil would compare... though I might just have portions of frozen chopped garlic and only add the oil when it goes into the fridge. Much of the time when you use garlic your cooking it in oil at the beginning of the recipe.

When I was in singapore. The minced garlic there is a bit wet like it has water on it. And the shelf life is also months as long as it is chilled. I wonder if it is also okay to add water or is it just the defrosted particles during the freezing stage.

I believe it's just the defrosted particles from the freezing stage. But it wouldn't hurt to add water. Downside is if you use it for frying you'll have more oil splatter. Our garlic stays good for months in the fridge after being defrosted from the freezer.

I totally believe you're correct about this method, but I've spent 15 minutes trying to find an article on Google verifying this method and it's safety, but I can't find one anywhere. Why does no one know about this?

As far as I know there isn't any research on this specific method. But, with our experience and research we are pretty comfortable with its safety. Making ready-to-use minced garlic ahead of time, and making garlic or other oils are a little bit different. I think that's where the confusion comes in to play. The shelf stable minced garlic in jars is usually packed with water and some type of preservative like citric acid.

For ginger I recommend cutting ginger into chunks and freezing them. When you're ready to use the Ginger take it out of the freezer and immediately use a microplane or small grater to cut your ginger while it is still frozen.

minced garlic, froze it, then put it in the fridge to defrost for use. i'm just saying the freezing process helps the garlic keep a fresher taste/texture while its sitting in the fridge to be used. no need to keep the garlic in the freezer the whole time.

I buy the 3lb bag of garlic cloves at Costco, Christopher's brand I believe, and run it all through my salad shooter. I end up with a large mixing bowl full of what looks like cole slaw. I dry it very slowly in my dehydrators and then powder it as I need it. I call it Nuclear Garlic because it is about 20 times stronger than store-bought garlic powder without the cellulose to prevent clumping, which is an issue also due to the high oil content. I am getting ready to powder some more and am going to add a bit of cornmeal to it to see if that helps. Any ideas? I will do half of the next bag with the freezing method. Thanks so much.

I know potato starch is also used as an anti clumping agent for shredded cheese. For garlic powder, I'm not sure though.

I did this. I tirelessly peeled 8 heads of garlic. Put it in the chopper. Froze it. Then put it in the fridge like a week later. And it ended up with a greenish grey hew on a lot of it. DID IT GO OFF? I did what you said. 🤬😭

At least 8 hours so it can fully freeze. I usually get about 3-4 containers when I buy this bag so I'll freeze all of them overnight and pull one out to keep in the fridge. The rest of the garlic stays in the freezer until i use up my fridge container. Hope that helps!

I have now tried this and it works. I can't tell how long the garlic lasts because I use it...but it lasts at least 2 weeks...I will keep a supply of chopped garlic in stock....yay!!!

Oh that's interesting... When I buy the peeled garlic from Costco (Christopher Farms brand) I've never had this happen. I have done some research and apparently older garlic can turn this color when minced. Weird color but safe to eat apparently. Maybe try using another source of garlic? Maybe scripting your videos so it's not so long drawn out and hard to understand. The Bouncing low monotone it's kind of hard to understand as well. So basically a nutshell mince garlic then freeze it.

Thank you! I was looking for an option where I didn’t need to add so much stuff to my garlic, but I hate to see any garlic cloves dry out and get wasted before I have a chance to use on my cooking. Thank you for this informative and helpful video.
