I grew up loving pecan candy because my family stretches from one end to the other in Louisiana! Usually, we have to wait until we travel back home to get it. It is so precious that I stashed some in the freezer from the last trip in 2016. Until I made your recipe that little piece in the freezer was guarded with a very close eye, lol. But your recipe has put an end to all that. I made two batches of it yesterday and my cousin just picked up everything for his Super Bowl party. Thank you so much for the recipe. It is delicious and just the way we like it. I am following you as a true fan. Your presentation is wonderful, easy to follow and professional quality. That makes it stand out from the many others that are posted.

Why do people always say what they do when the make candy. Ms. Toni, your candy looks great. I hate it when people comment about what they do. Just make a video of your method and hope people follow you. One fact about candy is that, 10 people who make candy will make it 10 different ways. Your candy looks great and I bet it taste just as good as it look. Keep the cooking and the candy making coming.

In the video, she mentions that "its not 40 minutes yet", kinda make you think it takes 40 minutes to make. I made this with the same ingredients and at the point all ingredients were added and the pot on medium level. it took 18 minutes and it came out perfect. I made this a lot as a kid growing up in Louisiana (Bunkie). At 21, I moved to Los Angeles (now 48) and I could not remember how to make it until this video. Oh, and back in the day, we called this pecan candy. Thanks!!!!
@YourHouseaHomeTV
@YourHouseaHomeTV 7 лет назад
Thanks aeggins1! Depending on the pot, amount of ingredients, even room temperature the time it takes to cook could be very different. It usually takes about 40 minutes to cook in my environment. And you're right, I grew up calling this pecan candy (more like pacon candy)...lol!

I grew up in the Magnolia then moved to Algiers. So many of my family members make it just the way you do. I live in Miami now with my own family. I've tried to make Pralines(plyreenes) about 6 times. All 6 times they have been too sticky, loose, or just plain horrible. On my last trip home to attend the Bayou classic events, My people all said no to making them(busy bodies) so I just stopped at the conoco off of Gen. Degaulle and purchased the whole tray(about 30 at $2 a piece). I love them so much but could never get them right. Thanks for the advice on the candy thermometer. I hope to try and make a batch tonight. I'm praying they come out ok because I have no more left from conoco thanks to my growing, greedy son.

I was kinda confused, cause I looked at another video, and he used 11/2 sugar, that's a big difference. I I had to check if he used more milk, but he only used 1 can. , I think yours is more gritty. So, it all about how you like you end product .
@nikki-marie5395
@nikki-marie5395 3 года назад
Yes. I thought 4 cups was a bit much. As my family recipe is 2 cans of milk 3 cups sugar and 1 stick of butter. However the candy looks very appetizing. I'm from NOLA as well and I fashioned a microwave recipe with only 1 cup of sugar. It yields one dozen large pieces.

Thank you for sharing. I have one question. Can condense milk be used in the place of evaporated milk??
@YourHouseaHomeTV
@YourHouseaHomeTV 7 лет назад
Lisa White I've never used condensed milk, so I'm not sure how it will react with this recipe. Condense milk is sweet and a lot thicker than evaporated milk so I imagine it will make the candy very sweet and maybe a bit harder. I wouldn't use it as a substitute in this recipe for evaporated milk, you may need to make adjustments. There may be other recipes online that use condensed milk to make pralines.

I bet both your husband and your husband's dentist thanked you profusely. LOL. Your pralines look great but paler than other recipes I've seen, is that because of your method? I like the idea of melting it all together better than making a pure caramel then adding.
@YourHouseaHomeTV
@YourHouseaHomeTV 7 лет назад
The candy is lighter because I added the pecans and last. If I add the pecans at the beginning it will make the candy dark from cooking. I like the lighter color and the candy cooks faster this way.

Your explanation about the history of pecan candy (now called Praline) is completely wrong. To think everything came out of Europe is ridiculous. Pecan candy is indigenous to New Orleans not France or Belgium or any other country in Europe as food historians and others would persuade people to believe. I, too, am native to New Orleans. As with most U.S. history, the history of our city and state, as commonly known, is a complete lie.
