I occasionally make onigiri at home, and it's always with tuna mayo since it's the easiest thing I have access to. That marinated egg yolk though....that might be a thing I try over spring break. Cheers Chef!

I really think Onigiri will become the next trend item. We had Ramen, Banh Mi, Pho, now it's time for some rustic/fancy/fusion Onigiri food trucks. They're so easy and fast to make but so freaking delicious.

Maybe due to my country being a rice grow country (not Japan) onigiri is a stable food in convenient stores. We have all kinds of fusion onigiri, Japanese flavors, Korean flavors, Vietnamese flavors, etc. They are so good and hearty for a meal

for the marinated egg yoke, i put the whole egg in the freezer for about 30 mins to firm them up. then just before cracking it open i dip the egg in hot water to melt the white leaving a firmer yoke less likely to break.

You shouldn't be afraid to try and make some, as they're very easy to make. You just need some sushi rice and nori, both of which you can find in most stores. No need for fancy equipment or ingredients. Fillings can be as easy as a piece of salmon.

Never tried Eel before, but I want try that one first. The miso peanuts one, I would want to experiment with that one. See if I could make a peanut butter out of it, or try using those flavors in a dessert.

One of my favorite homemade onigiri to make is mentaiko mayo with shirako (the little sardines!). I'll sear the shirako in a bit of soy sauce, mirin, and a bit of brown sugar- the sweet contrast to the spiciness of the mentaiko is amazing.

There are several schools of onigiri forming methods. The one I practice is the one where you repeatedly spin the onigiri between your hands for a long time, only gently patting it so you don't crush it.

8:33 Its literally the same way you did it. but she plates them on the side. you just put the extra topping on a different corner. they are like folding the nori when they do it and it looks kinda stylish because they are pros. but they are just tilting the rice ball on its side. basically.

I do the grilled eel ones all the time, but with teriyaki sauce and seasoning the rice like you'd do for sushi, with three or four small dabs of wasabi in the filling to spice things up a bit. Kind of like some more portable maki rolls

her peanut ones look way different. more dark and wet looking and they have sesame seeds as well. i think i figured it out though. make a loose slurry with your, ideally red, miso using cold or warm water. i used a bit of the sugar water from the next step. boil unsalted roasted peanuts and some sesame seeds in equal parts sugar and water. enough to barely cover them. reduce by boiling over high heat for a minute or 2. they should still be pretty wet. the "sauce" will thicken as it cools. i was worried i made it too thin, but i trusted it would thicken and it did. remove from heat and add the miso slurry. let stand to cool or refrigerate to thicken. i added a small dash of soy sauce to the sugar water. but im not sure if thats the move. its good with or without it and it makes it match the color really well. i think she might just have some dark miso though. and i added sriracha. i dont question that move at all. the little bit of added kick was welcome. and her website google translation describes the peanuts as "chewy" so maybe shes boiling roasted peanuts more. or maybe shes starting with raw peanuts and underboiling them. idk. i think using unsalted roasted peanuts and boiling them is the way but its just a guess. i plan to try boiling the peanuts longer next time. like 10 minutes. actually try to soften them up some. just to see how it goes.

What would be pretty neat is if you tried out some of the recipes from 'Cooking With Valkyries'. Each episode has a different recipe and they're legit, and provide a list of ingredients and instructions at the end of each episode.

And when it starts being popular among people who otherwise displayed no interest, devalues this content, pollutes the community, and can even derail the momentum of this project. Which in my eyes has been both dedicated and prolific for over a year, and i havent even watched all of the content this channel offers. I dont want to see a nflix show or anything else for that matter consume this channels potential overnight.

Onigiri are great for leftovers. Chopping or shredded leftover steak, pork or chicken. Add either some steak sauce, barbeque or soy sauce. Delicious. I also save things like chili, beef stew, pot roast and even hamburger helper. Fish is always great. If you in a hurry or budget even just like cooked ground meat, hotdogs, canned corn or sausages are easy fillings.

Chef Paul, you’ll never find raw eel, it’s illegal to sell in the US. BUT a good hack is to rinse all the sauce off your eel and add fresh unagi sauce to it and you sauté it for better flavor.

Dunno if anyone ever told you but they don't sell fresh eel, even in Japan. It keeps so bad that part of the way to conserve it is to cook it. So even in Japan they get it already made, all eel in restaurants is already cooked. The fisherpeople fish it out and cook it themselves to conserve it. So the freshest eel you can buy is freshly cooked eel in fish markets in Japan.,
