I wish I were there to show him how it’s done. I never had such anxiety watching a video. I worked at a deli for 5 years and got cut 3 times ( luckily not bad) but I do know first hand how easily those machines can take something off.

You're using your slicer backwards. Turn it around so the thickness dial and on/off switch is on the same side as you are. You should be PUSHING the product into the blade, not PULLING... Looks delicious,! Love your videos!

You need to stand on the other side of the slicer and use your right hand to slice the meat. I have the same slicer and it works great.

I have the same slicer also, however if you put your hand behind it, trust me you can not cut yourself it will make clean up easier. I would like to see how he cleans it lol

The strainer is called a Chinois. It is excellent for straining sauces and stocks etc.

Love the vid. Sam slicer should be turned around so that buttons and slicing dial are facing you ,cut on push stroke. Pls be careful and always use guards. Love y'all

Why are you slicing from the back side of the slicer? 1. Get on the other side of the slicer. 2. Put the meat all the way back (towards you) on the sliding meat chute/ tray. 3. Place the end weight (Part that goes against the meat) to press the meat against the blade. This sandwich looks amazing, I can't wait to make it.

Great looking sandwich! Sam, you were using your new slicer from the wrong end. Your stomach should be at the on/off switch and adjustment knob, and push with your right hand. It is designed to slice with the forward push/slice. Please always use the guard and never ever assemble or clean it until it is unplugged. Years ago, I had a cook that leaned over the slicer to clean, and it was still plugged in and he accidentally hit the ON button. The cut to his stomach was not a nice sight.

We made this! Sam hit another one out of the park! Hubby had never considered using round, as it’s customarily used as “burger meat” and he assumed it would be tough. On the contrary! Our roast was about 2 1/2 pounds, and Hubby cooked it on our gas grill at 275 Fahrenheit for 2 1/2 hours (medium rare). The rosemary marinade/rub is delicious and produces a gorgeous crust. We have a meat slicer too (Hubby is cautious with it) and we are thrilled to enjoy amazing deli-quality meat at less than half the price of what it would cost at the supermarket.

Like everyone else is saying, dude, you will lose a fingertip cutting meat without a guard. That meat just has to catch the wrong way and your fingertip is gone. Would hate to see my favorite cooking guy missing fingers. Keep up the good work!

Outstanding sandwich! Chill the meat in the freezer for 30 minutes before slicing, and consider some metal safety gloves. You made anyone who watched that a nervous wreck, seeing your fingers that close to the blade. That was almost a beef and Sam sandwich!

Gorgeous sandwich! That meat slicer reminded me that back in the mid 80's my mom bought a Hobart slicer at a yardsale. Sat on our kitchen floor for 5 years-never used it. She did sew a pretty, ginormous appliance cover for it though😂b

I have been butchering for over 20 years & have struggled to find good ways to use the eye rnd. I can't wait to try this sandwich! I was also wondering if u would do ur take on tamales? Interested in seeing ur flare on what is already one of my favorites! Thanks for all u do!

I'm with you. I hate eye of round. I've tried it a million ways, sliced thin on a Globe deli slicer, cooked rare-to-medium-rare, and it's just not the cut for me. For roast beef sandwiches, in order, my preferred cuts are: top sirloin, top round, bottom round.

Sam! Put the meat at the front of the chute, snug up against the curved plastic piece that moves back and forth. Having it wedged against that helps hold it in place. Also, try a French onion soup sandwich. I had one with toasted sourdough, gruyere, and a fluffy scrambled egg, then the onion soup broth as a dipping sauce. I'm guessing you could make it better, but as it was it was delicious.

I worked at Jersey Mike's for about 4 years or so so I've had some good time on a meat slicer. Also really good for slicing a lot of onions and other vegetables! I've also seen my fair share of blood and stitches!

That looks so good. I used to get a Steakhouse Beef Dip from Quiznos and it was amazing. Sadly all the Quiznos around me closed. I really miss that beef dip.

Your strainer is called a, Chinois. I have never heard the term "Chinese Hat". Besides its use as a strainer, it is usually paired with a pestle, with the idea of working food through the mess over a pot or a bowl. Similar operation as a food mill. Great episode!

Etymology. Chinois is a loanword from the French adjective meaning Chinese. French cooks call it this not because this kitchen tool comes from China, but because it resembles an Asian conical hat.

SAM, Unless you are into slicing the tops of your fingers off 2 things! FIRST Turn the slicer around, you were using it backwards and THAT is DANGEROUS! Second, USE THE DAMN GUARD!! I use ours EVERYDAY at the Theater. Nothing in your tool box will bite you faster or meaner than that slicer!

Great video! Eye of round can be a tough cut to work with. If you don't cook it just right, it will get dry and chewy. The way you cooked it is about the best way you could do a straight oven roast. The ONLY way I think you could possibly do it better is to seal it into a bag with the herbs and sous vide it. Everyone watching this is going to have slicer envy. That sandwich looks absolutely awesome!

I made this today. Except I put the meat on my smoker until the temp hit 130 degrees. I even have a smaller slicer. Really easy recipe, it was delicious. Family was happy.

It was killing me seeing Sam use his fingers to guide the roast beef!! Kind of like using bare fingers on a mandolin and then have to find the slice of human flesh!!

I never use the guard on my mandolin, I just slow down the closer I get to the blade, and stop before I think I should. You can do that pretty easily when the blade is stationary. But a deli slicer with a rotating blade? No way am I not going to use a guard!

I used to work at Delaney's Fish House in Anaheim. I used to make their roast beef sandwich which was similar to your sandwich with the addition of a roasted green pepper. Oh so good.

I've been thinking about getting a slicer for years, if only to make those perfect thin cuts of beef. When we do dips, I sous vide the eye of round, using pretty much the same seasonings you did, for about 24hrs @137°(the recipe I used said that closer to medium was better because it was more firm and easier to slice). I use a can of beef consomme with the juice from the bag to dip.

If you get a slicer, make sure you use it the right way around. Sam was using it completely backwards, which is super dangerous and gives you terrible results. Read the manual, watch some videos, maybe ask your local deli some questions. Don't do what they showed in this video, it was dangerous and stupid.

I make similar but I put my roast in a smoker at 225 and use whatever good large roast is on sale. I am going to definitely try your au jus.

That “strainer” comes with a wooden roller and is used to make things like apple sauce by grinding/forcing the cooked apples through the holes. It’s not a fancy hat strainer.

I warm the deli sliced roast beef in the sauce, but I use swiss cheese, onions and majo on sourdough sandwich rolls.

This video reminded me of a tipical Portuguese sandwich called "Francesinha", everytime I am back home its a must have, you should try and make one would love to see your twist on it.

I used to enjoy that awesome roast beef sandwich all the time. I worked in Brooklyn on Flatbush ave and enjoy there sandwich very much.

I worked at a place that still used an old hand-crank slicer. I was afraid at first, thinking it was more juggling of motions and would result in easier injuries. But it didn't work that way. It had a good gear system on the crank that could accelerate the blade to crazy speeds with minimal effort. But also, if you completely stopped turning the crank the blade would stop almost right away. You could still cut yourself if the blade was stopped, but it wasn't nearly as dangerous. It was an old industrial model, not one of the flimsy home slicers, and I've wanted a smaller version ever since, but never found one. I was told they were more common at butchershops than restarants, during the Depression and before.

I do mine w/ horseradish, pepperjack, a spoonfull of horse in my JUS -sometimes some jalapano & an oven mitt in the morning- case my t.p. catches fire!!

Eye of round is called Silverside in the UK, and is used a lot for roasts! It’s a delicious roast beef!

Really should stand on the opposite end of the slicer so you're pushing it into the blade instead of pulling.
