These is a super easy way to make smoked/grilled wings using a vortex on a Weber kettle. My results were a smoked wing that cooked in a fraction of the time with very similar flavors. They tasted like they had smoked for 3 hours! They were done in 35 minutes! The vortex acts like a chimney charcoal starter and forces air through the vortex resulting in really hot charcoal and a high indirect ambient temp.
Here’s how to do it!
1. Install vortex and grate with removable center. I used a Vortex brand vortex and a Onlyfire Brand grate. Pour 3/4 to a full chimney of charcoal into the vortex and shut the lid so it can reach a stable temp.
2. Open wings and place on a baking sheet or cutting board and spray both sides with aerosol duck fat or high temp cooking spray that won’t burn. This is to help rub bind to the skin of the wing. Then apply your favorite rub to the outside and use as much of little as you want. Be careful using any that have a lot of sugar in them because it could scorch in the higher temps
3. Place rubbed wings onto grate around the vortex. Be extremely careful placing them on because the charcoal will be extremely hot. You can use a heat resistant glove if you’d like or tongs. I also put a meater plus probe into one drum of one of the wings to monitor internal and ambient temp.
4 Afrer around 15 minutes open up your lid and spray with more duck fat or cooking oil to help keep the skin damp. It will help with getting more smoke flavor into the wings. Be careful not to spray directly into the coals or it will flame up.
5 monitor the internal temperature of the flats and drums and once they reach 190 internal temp they are ready to pull off!
Give them a few minutes to rest so you won’t burn your mouth on the juicy goodness of your wings! Once cooled some you’re free to enjoy! Some of my wings had crispy skin and there are a few ticks you can do to get them all crispy. You can salt the skin overnight, or use lump charcoal to get the heat even higher or put them over direct heat for a minute or so. I’m in the process of a getting a fool proof method to getting crispy skin every time. Be sure to subscribe to see the method when I get it done!
