3/4 cup light cooking oil
1 cup white granulated sugar
1 tsp vanilla extract
1 tsp lemon extract
2 1/2 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
1/4 tsp salt
1 1/2 cups strawberries, diced
zest, from 1 lemon
For Lemon Curd:
2/3 cup lemon juice, freshly-squeezed
2 eggs
4 egg yolks
1 cup white granulated sugar
1/2 cup butter, unsalted
1 tsp vanilla extract
For Lemon Buttercream (1 1/2 original recipe):
3 cups unsalted butter, softened at room temp
4 1/2 cups powdered sugar
1 1/2 tsp lemon extract
3 tsp citric acid
yellow food coloring
zest from 1 lemon
For Filling:
1 1/2 cups strawberries, diced or crushed
