Hello Lovelies!
This easy taco soup recipe is the best! It is a great addition to your recipe book :-) Your family will love this delicacy! It is on rotation for our Taco Tuesday meals! It is also easy to double the batch for parties or gatherings!
Enjoy!
Ingredients:
2 teaspoons olive oil
1 cup yellow onions diced
1 tablespoon garlic minced
2 lbs. ground beef (1 lb optional)
3 cups beef broth
15 oz tomato sauce
1 packet McCormicks Taco seasoning
2 10 oz cans rotel tomatoes
16 oz. kidney beans, drained canned
15 oz. black beans, drained canned
1 cup sweet corn frozen
1 bay leaf
1/2 cup fresh cilantro chopped
TOPPINGS - OPTIONAL
fresh tomatoes diced
red onions diced
avocado diced
sour cream
shredded cheddar cheese
Jalapenos seeded and sliced
Tortilla chips

I’ve cooked this taco soup several times and they are always a hit with my family. Delicious soup. The only thing different I did was brown the meat first then I drained the meat. I removed the meat and sautéed my garlic and onions then added the meat. Thank you for sharing this delicious and easy meal.

I started adding a can of diced green chilies (along with the Rotel) and a can of red enchilada sauce to my taco soup. The flavor is incredible!!! I just had two big bowls today!

I love my taco soup make it all the time, I put my taco seasoning in when I brown my hambuger after my onions gets cooked real good just something about putting it in with the meat makes it delicious flavor in it. Black beans in it yes is great 👍

I always add dry seasonings to by ground beef while cooking - - I like the meat seasoned, not just the broth, is my thinking

Hey I’m at this day new subscriber.. as we speak I’m cooking up a double batch of your soup right now.. I’m freezing 1/2 of it.. for chips and stuff.. I added One yellow pepper to the mix.. the house is buzzing delicious… X.O..

Kidney beans tear my stomach up so I do black beans and pinto beans. I also add a packet of buttermilk ranch dressing. Sooooo yummy. Lol like seeing how other people do theirs though! I chop up avocado and put it in my bowl w some shredded cheese and we eat it w tortilla chips.

Going to make this tonight! Will add some fresh jalapeños to it. Thanks for this recipe. You didn’t smoother it with cheese so nice. I don’t like cheese and trying to find recipes that are not covered in cheese is so refreshing.

I use a pound of ground beef and a pound of bulk sausage. Just adds a little extra flavor!

That's one herb 🌿 I can't stand we think it taste like soap cilantro oh no not ny husband and I. We don't like kidney beans either ma'am, I make taco soup at least 2 times a month , I put an extra can of green chili in ours 😋
