If you are missing eggs, you must make this vegan egg salad. It is creamy, eggy and delicious. Very easy to make; comes together in under 5 minutes.

Here's the recipe:
Egg Salad
.25 cup + 2 tablespoons vegan mayonnaise
1 tablespoon dijon mustard
1 tablespoon dried dill
1 teaspoon onion powder
.5 teaspoon turmeric for color
.5 teaspoon black salt (kala namak)
Ground black pepper to taste
2 green onions, chopped
2 teaspoon sweet pickles, chopped (optional)
1 celery stalk, chopped
1 teaspoon maple syrup (optional but balances the turmeric)
14 oz extra firm tofu (firm would work) - drained well
Mix together all of the ingredients except for the tofu. For a more creamy egg salad, add more mayonnaise. Crumble and/or cube the tofu. Mix into the dressing.
For more flavor, refrigerate for at least 30 minutes before serving.
Toppings:
Lettuce
Tomato
Pickles
Onions
Jalapenos
Notes:
Add more mayo for a creamier egg salad
Don’t skip the black salt, trust me bro
You could add more turmeric for a more yellow vegan egg salad, however it will make the mixture more bitter
