This was a bonafide feast! The finished loin you showed confirmed that smoking it is the way to go. For such a lean cut of meat, it looked so succulent; I've never gotten that result from cooking it in the oven.
@41:53 - “If you don’t have a probe” …you should invest in one. Using a thermometer and cooking to temperature stepped my cook game way up. Those chops look delicious. Great job 🫡
@@bbqsouthernstyle I could never get pork chops right until I got a thermometer and started cooking to temp. I don’t have the “cooking eye” of the elders where I can just look at it and tell when it’s ready.

@@bbqsouthernstyle I've never told you this but right now I'm not working I lost my job back in March so I have a lot of time on my hands I'm in the process of taking some classes but since I'm not working I still have a lot of time on my hands so between reading and watching good positive videos like yours I try to keep myself mentally stimulated in the focus on positive good things when I watch something on TV I'm not a big TV person but I do enjoy watching the videos because I always learn something about cooking and it keeps me focused on something that's good plus I'm trying to support your channel so I'm trying to watch every last one of your videos. Was looking up this smoker, and I did see someone does have the cone shaped rack to hang meat higher. In the ad it looked like weber style lid was used to cover(did not show lid closed on it was in background) the rack is bit spendy but if it come with lid to fit correctly could possibly usable. Anyone else see this?. Also do you have videos on rotisserie chicken, rolled roasts for rotisserie, like which cuts work best? Thank you. Love your channel gives me the confidence to try new stuff. Great cook chef - I just got a rod hanging addition for my direct heat cooker - so this was great timing ! How far is the hanging ring from the fire with the bullet lid on the PB cooker ? My rods are 28 to 30 inches from the fire
The problem with smoking catfish is the fat content is to low and not ideal for smoking but more of a grilling fish. I find the meat to be dry when smoked so I avoid it. But grilled hi temp with lots of smoke is a must have. Thank you for watching.
Just stumbled onto your channel. What is it you have like 40 cookers? That is insane. I just have an old Weber Kettle, but I get so much out of it. I am thinking about cutting a hole in the kettle and fabbing a duct to a small barrel or something and renting a 120v welder with a small CO2 bottle to weld it up. Then I could do long smokes easier. Right now I just have the hinges on the grill where I can dump coals on one side while putting the meat on the other. Would be nice to have a separate container and use the whole grill for meat. I mean, I could afford to buy a traeger or something, but its more fun to just build something.
Question for you why don't you make and market your own grill line I bet it be a huge success in the barbecue world You're very innovative in your cooking style when it comes to making grills and they work I can see it right now you had your own line or products think about that just thought I'd share that with you...... That is my concern with my wsm. I want to hang ribs. Definately want hangers thst protrude up into the dome. I havent looked but it only makes sense to be engineered that way
Southern smoker, if i used and electric smoker, can those pieces of pork come out the same, still using coals? Or will it cook differently, even if i was to maintaining the cooking temperature?
@@bbqsouthernstyle Yeah, I know but I am using coals in the slow electric cooker only raising it where the coals don't reach the electric rod at the bottom, but is giving out heat, where as the charcoal is Cooking the meat or meats. Now do you know what I mean?
Cant beat eat'in tenderloin. Not to be confussed with loin- its $2.79/# on 6-12-24 in Tampa,Fl. 8# avarage weight!! I like to tell the market price and where that is at.
Deja vous, yesterday I came back from the market and bought 4 thick cut chops and a tenderloin. Well, that settles that about cooking them up, however I own a Gateway 55 gal and think it covers the bases for your concerns you brought up around the smaller cooker barrel. They're in the freezer now but will be prepared the same soon. Thanks for the idea for both because the chick pea will be done today

The side I like most is the side where you can start eating. I also clean my chicken with lemon. It’s also a layer of flavor. Good to see you Sir. Looks Delicious
