Thanks for the info. Basically, to combat ripening and decay, you're trying to stop evolution because those apple seeds want to be spread around the world to survive to be the next generation. And in order to do that make the fruit has to smell as wonderful as possible as soon as possible to whatever animal is going to eat it. Your cold storage ideas are excellent, perfect to stop that. And the fruit is basically a laxative so that the seeds come out as fast as possible in order to survive in the animal intestines. Eat up! ... Instead of those potato chips.

Do you closed the lid on the freezer? I'm a thinking its not plugged in? Are the apples loose or do you put them in bags

@@pammiestewart1419 keep the lip close and use a thermostat to keep temps in the low 30s, I either wrap apples in newspaper or ziploc bags with cut corners (if you grow your apples in ziploc bags) Keep em off the bottom cause water can build up.

Hey, I've also got a golden russet. One of my favorites. I like baking with them by mixing half and half with another variety.

Gosh, I don’t know whether the seal the bag or leave the bag a crack open because depending upon which video you watch, you have different people saying the opposite things. So very confusing !

This is JUST the information I was looking for! Thanks so much! We have some ancient apples on the property - pretty sure one is Grimes Golden. The other late apple is unnamed but a good keeper. I KNEW they just weren't "finished" when ready to pick, the flavor is hidden behind the acidity. I felt if I could just let them ripen correctly in storage I'd have something special! You've just made my day with this information, because I know those apples are going to be better and better as fall progresses. Now I'm off to put some damp paper towels in the bags! Thanks again!
