I was born in Thalassery but reside in Kolkata so I have had best of both worlds in terms of Biryani! My Dad is from Calicut & Mom from Thalassery. This food vlog brought some wonderful gastronomical memories with Malabar Biryani & Paragon. Would recommend all to try.
@@MrHappy-ct4ig I like the Kolkata Biryani also especially the melt in the mouth aloo & well cooked mutton falling off the bone. But I would prefer Malabar Biryani any day over Kolkata Biryani
I salute you for the focus on the popular dish Biryani. I have tasted many types of Biryani in the country, and all have their own specialty. But my favorite type is the Kozhikodan Biryani. Even though I am an Odia and settled in Delhi, I have visited to the world famous eateries joint PARAGON in Kozhikode twice and eaten their preparations which is a lagendary in itself. Thanks a lot.
Calicut biriyani is exotic. You would find it in its pure form only in a few restaurants and mapla households where grandmas handed over the recipes to the next generation. Every food lover should try it once at-least from an authentic restaurant or home.
Being from Maharashtra, i have visited all the major states and tried their biriyanis. Still havent tried Lucknow Biriyani. My ranking will be like this 1. Thalassery Biriyani 2. Malabari Biriyani / Hyderabadi Biriyani ( Tie for me lol) 3. Old Delhi Biriyani 4. Kolkata Biriyani 5. Tamil Biriyani from Thalappakkatty
Ahamed Ali Shaik Have you tried Ambur biryani? Boss the list goes on. People from different region crave for their unique taste. Don’t make it that as king of biryani. Even I had Hyderabadi Dum biryani, Thalaserry, Kozhikodan biryani, Ambur biryani, Thalapakatti biryani, Delhi biryani, Lucknowi and Kolkatta biryani. Different region biryani has different unique taste. Just enjoy the taste. Don’t self proclaim it as the ultimate biryani.
hyderabadi biryani of basheer bagh wins hands down india's best biryaani undoubtedly thalassey or malabari are the same and they add coconut milk to it which is yukkkk

The word Biriyani is just enough! Wherever it’s from, it’s superb! But obviously everyone will love the flavors that they are used to from childhood. So no need of comparing n saying ill about food specially! My mom is expert in fish biriyani n tats my favorite
Malabar biryani is pretty mild and fragrant too because of the Jeerasamba rice. They also do add cashews, raisins and tiny pineapple chunks in the biryani that gives it a mild sweetness. It's my favorite after perhaps the Kolkata biryani.
Not only biriyani, Malabar cuisine is a blend of authentic snacks and foods which are entirely alien to people from other state of India , and these are super tasty and mouth watering dishes. Because you mentioned in the last, about the evolution of Malabar biriyani I must say even todays malabari food culture is hand in hand with Arabic cuisine.. and many exotic Arabic dishes like Mandi,Majboos,zurbian,buhari rice are widely available and well accepted by the people of Malabar in its original form and as our own Kerala versions. Places like Malappuram,Calicut,Kannur,Kasaragod...etc are unexplored food heaven which are not known to many...

Not really. Only few people fry the chicken. Authentic tellichery biriyani doesn't fry the chicken. I can't agree with u. BTW biriyani is made differently from home to home.
@@bismillahir bro, I've tried hyderabadi paradise biriyani, kolkata biriyani, dindugal, ambur and varieties of malabar biriyani. No doubt, thalassery biriyani dominate. Bcoz it's blend of perfect spices and the special rice called Jeeraka shala.
Mr Kapoor you have to taste biriyani from the kannur's restaurant, Muslims marriage ceremony, home made. Restaurant like the famous MVK restaurant, Taliparamba's FOOD HOUSE RESTAURANT, kozhikode's RAHMATH HOTEL etc...
Chicken biriyani, be it hyderabadi or malabari is just meh, gotta eat mutton biriyani, i like hyderabadi, and beef biriyani ofcourse malabar style is my favourite.
