Good question, you can actually siege fiefs alone. It takes ages to set up your siege camp but you can do it. For me it's less about how many troops are in my warband and more about if I'm ready to own a fief. The game quickly becomes all about your fiefs when you start taking them and if I'm not ready for that to be the case then I won't start taking them. That being said I'd want at least 100 troops in my warband I think.
