Carrots are a natural sweetener and combator of the acidity in tomatoes. Depending on the amount of tomato sauce use half to a full carrot or so. Chop up and sauté the carrot and me personally I'll blend it with some of the tomato sauce to incorporate it fully but you could just add it into the sauce with the onions and peppers...good either way ❤

Looks incredible. The only thing i would do differently is toss the cooked pasta in some sauce before putting in the baking dish. That way you dont have any naked pieces.

If you have a low wattage oven like me…bake on second rack from the bottom at 375 covered for 35 minutes covered and 15 uncovered at 400
