Ingredients -
1 - Brown (Yellow) Onion, Sliced
4 - Garlic Cloves, Minced
25g (0.8oz) - Ginger, Peeled & Minced
2 Tbsp (50g) + 1 tsp (10g) - Coconut Oil or Olive Oil
750g (1.6lbs) - Chicken Thigh
3 tsp (7g) - Ground Cumin
2 tsp (3g) - Ground Coriander
1/2 tsp (1.5g) - Ground Cloves
2 tsp (6g) - Smoked Paprika
2 tsp (5g) - Ground Turmeric
4 - Cardamom Pods
3/4 Cups (180ml) - Chicken Stock or Vegetable Stock
12g (0.4oz) - Desiccated Coconut (Optional)
2 Cups (500ml) - Coconut Milk
Seasoning To Taste
Garnish -
Roasted & Chopped Cashew Nuts
1 - Spring Onion (Scallion), Green Stem Only, Thinly Sliced
1 - Long Red Chilli or Birdseye Chilli, Thinly Sliced
Coriander (Cilantro)
Rice -
1 Cup (195g) - Basmati Rice, Washed
2 Cups (500ml) - Cold Water
2 - Kaffir Lime Leaves (Optional)

@@westcott2204I would blend the onions leave them out of the marinade and fry as in the recipe. Our family doesn’t do cut onions like that we always blend or back in the day mortar and pestle it makes for a very smooth gravy. Nothing wrong with this recipe.

Indeed it is delicious. I used Kashmiri chilli powder instead of paprika, and sprinkled on some Kashmiri garam masala towards the end. I'll try your suggestion of puree-ing the onion next time.

Update: Made this for dinner, absolutely delicious!! I only left out the desiccated coconut & cashews. This will definitely be on my regular menu. Anyone who might think there are too many flavours or that it might be too pungent, it all melds together beautifully, creamy but not overboard, & the flavour.. I always have a well stocked pantry & fridge, grow my own veggies & fruit & would always end up making 4-5 meals in a circle. Your recipes have really changed my approach to cooking, love your recipes!! 🌺🇦🇺

I've been striving for the perfect BIR (British Indian Restaurant) curry for the past year, tried multiple base gravies, different spice blends and my girlfriend hasn't shown even the smallest interest in the results... Yes indeed...."curries" vary from country to country and even region to region within.... This seems a rather mild curry to me unlike the "hotter" ones from, say, India....which are not to everyone's palate.

For anyone who wants to make this more authentic, add diced or pureed tomatoes in after the onions and let them cook before adding the coconut milk. Also slice the chicken into bite-sized pieces to make them, ya know, biteable.

I used to go to Viceroy of India in Chicago to eat this delicious dish, But I moved to Texas and I miss that exquisite taste, luckily I found this recipe perfectly explained and I can't wait to prepare it and enjoy the unique flavor of curry! thank you very much chef!

Fabulous video! Thank you! Many years ago, I accidentally made an out-of-this-world curry sauce from scratch for my family. Seriously, it was sublime. Of course, I immediately forgot how I made it, then figured, why ever bother again if I can’t recreate it. Your recipe sounds amazing, and might come close, so I’ll give it a go! I’ll probably go with tiger shrimp rather than chicken. Nothing’s better than a perfectly sautéed big shrimp that snaps when you bite into it, covered in the perfect sauce! Too, your knife skills are wonderful, and show your expertise. Thanks again!

Tried this and it was absolutely delicious!!! I somehow didn't make enough sauce though, might have been the type of coconut milk I used. Regardless, this was the best curry I've had in a long time, thank you!! Will definitely be making it again. Also looking through the comments it blows my mind how many people are confused by you not putting 'curry into the curry'... I'm surprised so many people think a premade spice mix counts as a curry??

Correct! It's amazing how many people think curry comes as a liquid in a jar! 🤣😂😅 Curry "powder" comes in many blends of the various spices in various ratios.... some are even absent from others.

Amazingly done.💐👌 Being an Indian from the south part this is the exact blend of ingredients we use combining coconut and spices.Sealing and browning the chicken before the grand finale looked absolutely inviting .One thing we would have added for our palate was some lemon juice during marination and towards the end.

Really!!!??? You are making south Indian food without curry leaves? Good luck! (I can understand Jack might not get curry leaves that easily in America but in South India curry leaves are very easily available.)

@@ganeshcsaiisc // True, curry leaves are an integral part of a South Indian traditional cooking, to enhance flavour, but again depends on how one plays with flavour, consistency and texture to achieve the final dish one has in mind, as cooking and techniques evolve all the time. Lemon being acidic helps in quick marination process and balances the flavour especially when cooking chicken and other non-veg dishes.

This looks a great recipe and love the channel. When I make a homemade madras curry, it actually becomes three different meals. (I also always add a very ripe banana to my curry recipe (yes!, banana. It subtle sweetness to the curry, and it completely dissolves in the cooking process so don't worry). So, the first meal will of course be the chicken madras curry has intended. The extra left-over chicken and sauce will be refrigerated or frozen (depending when the next curry based meal will be). The second meal will be formed from the left over chicken and will be made into chicken madras shortcrust paties (add a crispy mint side salad) . The third and final curry madras based meal will be from the final chilled or frozen madras sauce. This I add chunky cut sweet potatoes, to make sweet potato and coconut cream soup' from the remaining sauce. Also curry base sauces always test their best when made and 'cooked' the day before, and then chilled. This gives the spices time to infiltrate the sauce and give it an even better base flavour.

Things we see in this channel: - Save scraps for a stock or a compost bin (Don't remember seeing the bin in this channel yet lol). - Great explanation on what to do on what moment, AND the reason why we do this. - 1 teaspoon of Sea salt flakes and 10 cracks of black pepper. We need seasoning. ALWAYS. - A reminder that flavors should become friends. Power of friendship wins. - Comment sections that are healthy, and active. - Quality content. We love to see it. We gotta sit back, relax, and enjoy. (Love that part xD) - And leaving with two things: The will to put the kitchen in a total mess by trying to make all the recipes we see, and hunger, lots of it. I'm glad this guy seared the chicken first and cooked the onions in the fond. Even some indians don't do that. They either make the sauce first and add the raw chicken. or cook the chicken separately, and do nothing with the fond. You want the chicken slightly charred, with the flavour in the sauce too!

It looks superb and probably tastes better than my version. I don’t actually use coconut milk, I do use coconut oil though. I make a gravy with arrowroot flour and all organic ingredients with basmati rice as well but the arrowroot flour that I use is full of B vitamins and is supposed to remove toxins as well, all I know is that I feel really good after eating it. My local restaurants don’t seem so nice since I’ve been cooking for myself.

That takes me back to my University day with a Malaysian roommate. We'd rotate the cooking duties, and cleanup was easy since we ate with our fingers. The smells were to die for. Your recipe looks very similar, I'll have to try this.

As a substitute you can simply use garam masala and tweak it with cumin and/or coriander powder to your liking. If you can use crushed cardamom and couple of cinnamon bark pieces, even better.

wow that looks good! saved me a bunch of money, I usually save the sauce from take outs and just cook chicken and re add the sauce... works well for reusing left over sauce.

Perfect!! This is the sort of food that I love to eat...who doesn't like coriander leaves? Really? Damn...I LOVE coriander leaves! One thing I will say...as a Head Gardener with 40 yrs experience...DO NOT put onion peelings, garlic, ginger, scallions, into your compost maker...it'll kill your earthworms. Put that stuff straight into your food recycling container or your general waste...Keep your compost maker for general pH neutral veg peelings and some fruit...but not too much citrus...those earthworms are sensitive to acidic foods like oranges and the onion family!! It will kill them! Feed those earthworms and they will give you amazing compost. Great recipe Mr Ovens...

Looks great! My Indian friends (from northern India) usually use more coriander than cumin in their cooking, and I have to agree that for an Indian taste, it works better. They also tend to start by slow frying onions to use as a base. But of course, that's their recipe, almost anything can become curry and be delicious!

The usage of coconut oil, Kaffir lime leaves, red pepper chopped up for garnish/added kick, coconut milk are all Thai food elements. Usually in north Indian curries I've only ever seen either groundnut oil/neutral like canola oil, cashews/cream for milkiness, green chillies used in begining with ginger+garlic. However both are my top favorite cuisines to cook as well as eat, would absolutely love to try this and see how this fusion comes out!

South Indians use coconut oil. And grated coconut (the actual coconut rather than coconut milk). The concept of using cans of coconut milk is foreign in South India. But kaffir lime is definitely Thai.

Pretty much exactly my chicken curry, and yeah I eat it once a week too. I don’t mind lightly frying a good handful of raw unchopped cashews at the start, then adding them back in towards the end. It’s a texture thing. It’s like coming across gold nuggets in the rice and sauce mix.

Tried this out. Changed it a bit. Not using chillies added honey and thin carrots and added for sweetness and when chicken was seared I sliced them add parsley and topped diced cilantro the the rest of carrots and walnuts

Thanks for another chicken recipe, chef! The addition of roasted cashew nuts is a nice idea. Whenever my family cooks chicken curry, we usually add potatoes and carrots. I'll suggest the roasted cashew nuts next time we make one.

Made this last night and yumm sooo good. Only thing was there was a tonne of sauce left I could've easily used 1kg of Chicken & will next time. Thank you Chef Jack 👍

Have been done bit similar chicken, but with "pulled lazy version" in oven. Fry chicken similarry on pan, add 3 shopped garlic pieces and seasons you prefer (curry, salt, ginger, chili etc) after first turning. Once both sides are done, add 500ml of coconat milk and heat untill boiling. Put then chickens for rather small diameter bowl tighly, pour heated coconut milk on it. Put in oven for 1 hour at 175 celcius and enjoy. This was actually uninted food as bought boneless thigh instead of chicken tenderloin.. Had to imagine something to cook longer to get thigh to settle and this great food was the result. Have been done that this since that quite ofter :) This recipe would go to test at some weekend, looks great!

This has become my go-to week night curry for the family, everyone loves it. Have tweaked it a little, a bit of cayenne and especially halving the turmeric has made it even more popular.

Made this and it came out lovely.... I had to edit my post and add ... I love curry and the wife likes it so so. I added diced tomatoes and kept the heat at a minimum for her. she is coming round, when I told her I was making curry again she replied great. Normally its a bit of a fight. . This is now my once every fortnight curry 🙂 Thanks again.

I do this curry but add some tomato paste or crushed tomato. I also add saffron. Awesome depth and flavor mixing saffron with coconut.

A very comforting and yummy curry which I've made twice. On the second go, I cheekily made a couple of (reasonably informed) changes to Jacks' recipe, which worked very well. I used Kashmiri chilli powder instead of smoked paprika, and I sprinkled on a scant teaspoon of Kashmiri style garam masala a couple of minutes before serving, to give the "taste profile" a bit more depth. (I also found the chicken thighs needed another 10 minutes). Deee-lish!

@@dianebaum5194 ... Yes that coconut milk is well fattening, but I do love it in curries. I just eat one meal a day if I'm using coconut milk and usually walk a couple of miles after dinner. 🙂
