Cannot be over-emphasised how much time and trouble is saved by having all your ingredients laid out before you start. Mis en place. No last minute panic, no over or under cooking elements in the dish. Literally no skill required - just process. That said, I am more impressed by your son being so into mushrooms. Admittedly, mine are a little bit younger but it’s more like garlic to a vampire. Constant lies as to what the small bits are will prevail.
I got to make this the other night, and everyone loved it (had to add a bit of chicken for the kids). Really appreciate the ingredients list at the beginning, I'm often too scared to try online recipes because I'm never sure if I have everything I need.
Edit: ANYONE not used to cooking food not deserts with nutmeg especially fresh grate,(it can ruin the dish for your newly intro'd tastebuds :) like cilantro and many other distinct flavors.. work your way up in the amount, a little goes a long way but when you start to enjoy it you'll find you can go deep with it. Yup 2 min in I see all the Yummy✨ layed out. THIS..This is Exactly what I had in mind. Bless you and your Fam. Having your son come home from school and rate dad's cooking(you're already Blessed;) and see HE is used to the nutmeg and wants more. OK Thank you I will be making it this week, maybe brown 2? italian sausage in a side baker when the shrooms cook cut them up and add to the dish,we'll see as it looks perfect as is. I like knowing that having all the ingredients is the hardest thing about these recipes. All I need is to go to the store if I'm missing anything and I'm good to go!
It’s good he shows them first because if you make the dish a few times you just need to see the ingredients lined up without watching the whole video again.

Made this last night and it came out great. I really appreciate the layers of flavor in this dish. I almost left out the thyme but I’m glad I ended up putting it in anyway. Roasting the mushrooms in the oven gave it some great depth and the fontina was a nice change from the “usual” cheeses. I did use frozen spinach rather than fresh because I just didn’t have the time and I don’t think it made any appreciable difference. Nice option for a meatless meal! Served it with a side of rapini of course 😁😁😁
Ha...I'm glad to see I'm not the only one who pauses and has to move something to a bigger bowl! Sometimes I end up with 2 or 3 bowls I messed and then discarded for bigger bowls. I am going to try a personal "Meatless March" and this would be a perfect dish for that month. All the flavor, no meat.
As someone that is lactose intolerant I've decided that I sub out anything related to cream and milk with coconut cream/milk. I can tolerate a bit of the grated cheeses so I can add a bit of it.
Not a fan. Pasta looks so dry and hard on the top. This always happens baking any kind of pasta, whether it's this or mac and cheese or whatever. Definitely sticking to the stove with a pan. Pasta comes out perfect and the sauce is perfect in consistency and the pasta is never dry or overcooked and it's glazed properly. Never going to get that by baking it with it exposed at the top. If you're going to bake pasta, the pasta has to be submerged and never exposed to the top, which is why a lot of lasagnas don't have a pasta layer on the top - it's at the bottom. The meat sauce and cheese prevents the pasta from drying out.
This is sooooo crazy you’re making this! I always make this and everyone I bring some to acts like this is some concoction from my imagination lol. I’ve also made it with ground turkey italian sausage and it is 🤌🏼chefs kiss.

I made this! The delicious aroma emitting from the oven was incredible! I made the recipe as written which is a lot of for one person. I have two dinners to freeze and two more 'plates' for the next couple of days. Lunch or dinner. This is fantastic! Definitely going into my recipe binder. THANK YOU!
I agree it absolutely helps when you go over the list and I always appreciate it, especially when you point out options, what can be left out, and even which stores have the cheapest ingredients, etc.
I love that parchment first then foil hack. It's so annoying to have cheese come off with the foil when you cover something in the oven like that. Great tip!!
This looks absolutely mouthwatering! It's a little reminiscent of a dish I make with egg noodles and a mushroom cream sauce, but the whole top is smothered in a mushroom ragout, and the cheese is gruyere. I love the idea of roasting the mushrooms - is there anything more boring than sauteing? Can't wait to try this, thank you for your consistently great videos!

I gotta say, I have learned SO much from watching your videos. The thing I've learned the most is to take out all my ingredients beforehand and set them up like you do! It has created so much simplicity for me now as I'm no longer hunting for the ingredients while I'm trying to cook at the same time. I'm such a scatterbrained and visually impaired so when you lay out everything you're using and go over it, that allows me to do the same thing at the same time LOL I can't wait to try this one!
First off your channel deserves far more views, love your no nonsense recipes. A nice tip I learned from ATK, IIRC, is to halve the amount of ricotta and replace it with cottage cheese, this singular step adds so much creaminess and needed moisture to ricotta based pasta dishes.

Love Fontina. It's such an underused cheese here in the States. I work in a deli that sells Boar's Head, and when people ask for Monterey and Provolone, I always recommend Fontina, too. Great in Mac and Cheese ... and cheaper than Gruyere!!! For now ... anyway ... Tidbit: Grocery item most stolen in Great Britain is cheese! It's a black-market commodity sold to pubs ... Love these non-tomato based recipes. When I was a young, starving teacher, my fav. and common meal was ground beef mixed with cream cheese, sour cream, garlic, onion and served over noodles or mashed. I still make it, but it ain't cheap ... and tough to find cream cheese ... Thanks for posting! Happy New Year to you and your family!!!
I'm not surprised by the perfect 10. The kid skews toward pasta dishes because youngsters are starch fiends. I was impressed he pulled the Nutmeg out....nice!! I lived in Italy during my preschool ages and they served us pasta a lot during lunch. What kid doesn't like it?
