Shave and moonwalk were different techniques. After running nonstop for so long his legs were strong enough to propel him upwards by kicking the air.

Nope , it's the same technique ,,,, Robin said herself ,,, actually sanji kicks the air soo fast that it creates a thrust on the air and enables him to fly in the air .

shave and moon walk are two separate powers. It's explained in water 7 so it's not spoiler. They are 6 in total: Shigan (Finger Pistol) Tekkai (Iron Body) Geppou (Moonwalk) Soru (Shave) Rankyaku (Tempest Kick) Kami-e (Paper Arts)

Yeah, Geppou (Moonwalk) and Soru (Shave) are separate techniques, so Sanji being able to fly isn't necessarily connected to his speed. I think it's related more to leg strength than anything, but that's just my take on it....

I remember not liking certain parts of the Fishman Island arc except the lore/worldbuilding, but this final fight was hype AF with the Strawhats showing off. Sanji's sky walk especially was something that had me super excited. After seeing CP9's moonwalk I was really hoping Sanji would adopt it since it relied on legs and that was his specialty, and I was glad Oda finally gave it to us. Also, Sanji's Poele a Friere: Spectre is similar to Ivankov's Spectrum attack, so it would imply that he learned some or at least adopted Newkama Kempo into his fighting.
