Step 2: dice the potatoes into small cubes. Step 3: add the diced potates into BOILING water and let cook for 5 - 7 minutes. Step 4: transfer the boiled poots into a mixing bowl. Add a drizzle of olive oil, one clove of grated garlic, and a generous pinch of salt. Make sure the potatoes are well coated - they should look like mashed potatoes. Step 5: add the putins to the air fryer. Cook at 380F (193C) for 10 mins, shake, then cook at 400F (204C) for another 10 minutes. Step 6: profit
If you add baking soda to the water it makes the outside even better. I also recommend making a garlic oil instead of putting garlic straight on them so the garlic doesn’t burn
I saw many recipies goes for vinegar in water because acidity makes potatoes more firm and it takes more time to boil them to a mash. So you can fluff exterior even more which gives more surface exposed to dry heat, hence better crunch. Interesting what logic is in adding soda though. I know people cook beans with soda to speed up process and make them cremier
The baking soda breaks down the cellulose better than plain water or vinegar and makes the potatoes get more roughed up on the outside when you rough them up so they are more craigy and crunchy
@@scoobydoobielll5632 makes sense, i guess you need less boiling time with baking soda then with plain water/vinegar, am i right? Most vinegar recipies gives solid 8 minutes of boiling before potatoes becomes too mushy to hold its shape
I believe that boiling is one of the things they use to make sweet potato fries crispier instead of soggy and limp. The high penetrating temperature denatures the amylase iirc, preventing the amylase from converting starch into sugar
I made this with baby potatoes previously cooked in the oven that my grandma made today, I decided to turn them into this and I wish I could tell you how GOOD they were. Just olive oil, parmigian cheese, got a bread that was not that fresh but good enough to make bread crumbs out of it, oregano, a little bit of salt and pepper because they kinda had already. Pre heated the air fryer at 200 celsius, then got them in there of 10 minutes and it was SOOOOOOOO CRISPY I loved them!!
Made these last night to go with a rotisserie chicken. Both my husband and I loved them. So nice to not heat up the oven on an 85F day but still have crispy roasted potatoes.
I was on a quest and imo Chef Johns are IT! You also have to parboil but a bit of baking soda in the water to make the outside of the pots a little craggy for more surface area. Everything else the same. They get SO crispy it’ll make your eyes roll back in your head and your family will say “HOW did you make these???”
I just love the way this recipe started...dig some new potatoes from the garden.... I miss doing that in my grandparents house where everything was cultivated,grown,raised,pickled, preserved and boy... were we the healthiest ever... And those potatoes look yummy 😋
My guy... you're onto something with these. They were a complete hit in my house when I whipped these up. Super versatile too, cut them a little smaller and put them with breakfast and they're perfect breakfast potatoes.
you dont need an air fryer at all, an air fryer is quite literally a smaller version of an oven for the countertop (more specifically an oven with the convection setting) that's all it is, so if you've got an oven you can get pretty much the same result and if you got a convection oven you can and will get the exact same result (just takes more time to heat up because it's larger, although you can do bigger quantities)
This is my favorite form of potato, except I just cut them up, throw them on a baking sheet, drizzle with olive oil and sea salt, and let them bake in the oven for 30-45 minutes (depending on how small I chopped them).
I just made these this morning and they were perfect! I added sweet potato to the mix (didn’t boil as long) and pan fried some onions and finely diced chicken sausage for a skillet topped with egg and avocado 🤤 my family loved it, thanks for the recipe!!!
Just tried it,it was perfectt 💕🚨🙏🏼Mine was not as crunchy as yours(think it is about my airfryer or because i peeled the skin)but the texture and taste were still so good.I also added chili flakes and rosemary,and i cooked it for 25 minutes.Thank you so much 💕

Tried this technique and seasoned mine with garlic salt, black pepper, and cayenne. It's absolutely one of the best things I've ever made in an air fryer.
I’m gonna say that the secret is pulling potatoes from the ground right before cooking. I’ve seen this recipe hundreds of times w/o that level of crunch.
you dont need an air fryer. boil for 30 minutes, drain, add oil and salt and garlic powder, stir with a spoon like your carving out a pumpkin, throw in a pan at 375 for 50 minutes and if you like chicken, throw a chicken leg quarter just above the potatoes with skin on and taste the experience of waking up the day before work with zero plans. Salt immediately.
I heard something about adding pitch of baking soda into the boiling water will help with making potatoes really crispy I also like to return the potatoes into the pot after draining them and then shaking the pot to help ruff up the potatoes edges
Throw a little bit of baking soda in the boiling water to break down the outside of the potatoes. Only need like a teaspoon and it works like a charm. The broken down potato makes a super crispy shell on the outside.
