It's a good point that you are making because there is a tendency to gloss over the messy bit of saying goodbye to a loved one. I am a celebrant and I do call them celebration of life funerals. I make it clear that the purpose behind this ritual of saying goodbye is to focus on the life before we move to the reality of the situation which is that we are gathered to say a final goodbye. The grieving process that follows will hopefully be able to take comfort from the ceremony as they remember all of their loved one's life rather than just the "moment" that it took to die.
