Here is the thing, in Nha Tranh or Ninh Thuan, we don't use chopsticks to eat Banh Canh. We use a specific big spoon to chop the noodle into 2" fragments and eat. The reason is that the noodle is made of pure rice flour, so it's really soft and easy to be broken if you pick it with chopsticks.
I'm from Nha Trang, and honestly, whenever I go to another city, I cannot find any Banh Canh as good as it is in Nha Trang. Nha Trang's Banh Canh is so unique 😍

Hi Max! One specialty that I highly recommend you to try in NT is “Nem nướng Ninh Hoà”. Believe me, you can’t go wrong with it. It is completely different from any other kind of “Nem nướng” that you have tried in other places. I live in Nha Trang and i’m happy when you like the food here. The duck and rice is one of my favorites. Hope you enjoy every second in Nha Trang oh and i recommend you to try the “nem nuong” , trust me, you will fall in love with those meat and salad rolls
That food looked so good. Bowl of noodles for less than 2 bucks, banh mi for less than a buck. You can eat like a king for under 10 bucks a day. Not too big on traveling with all the restrictions but I have to visit for 3-6 months. I could probably eat at that first place you visited for months.

Max, unbelievable you have chosen all good dishes in Nha Trang, especially bún cá was a good choice. Before 1975, there were a lot of American contractors worked in Cam Ranh Base(American Military base before), they had lived in Nha Trang. Anyway, Enjoy Nha Trang and the foods.

banh goi is a different cake it usually is wrapped with banana leaves and has ground pork, mushroom ínide, and steam-cook. while banh xep if wrap by flour and have some additional ingredients like onion, quail eggs. and deep fried.
