The Easiest Baguette-ish Bread: Legate Loaf

**RECIPE**
1/2 cup water
Pinch of yeast (no more than 1/8 teaspoon)
1/2 teaspoon of salt
1 cup bread flour (you can use all-purpose, but you'll probably need a little more, since it absorbs less water)
*Note: Recipe requires a food-grade spray bottle filled with water.
Mix ingredients in a small glass container (at lease twice the volume of your dough, circa 1 quart) until they just come together. The dough should be just barely wet enough to have no visible dry patches. Add more water or flour if necessary. Cover and either rise on the counter for a few hours until about doubled in size and then refrigerate (at least overnight), or put it straight into the refrigerator for a week.
Prepare a parchment-lined baking sheet. Wet your hands and stretch the cold dough into a snake the length of the pan diagonally. Lay the dough on the parchment diagonally and let it stick. Spray the top with water to keep it from drying out, and let rise for about an hour until puffy. Bake at 500 F, spraying frequently (at least for the first 10 minutes, until fully puffed up), until dark amber and done, 20-25 minutes.

Q: Why didn’t you score the bread? A: That dough is too wet. If you scored it, it would immediately smoosh back together again. No point. Q: Why did you spray it instead of putting a pan of boiling water in the oven to create steam? A: Not only does the pan of boiling water method create a mess that then needs to cool down before you can clean it up, it also doesn’t work very well. That’s why most of the recipes that call for it tell you to use it in combination with a spray bottle, or do to something crazy like fill the pan with river rocks to create more surface area for the water. I think the bottle is way easier and works better. But you do you. Q: What do you mean salt doesn’t kill yeast? A: I’m sure it will, but only in sufficient concentration and if given enough time. I have made many bread doughs. I have tried putting the salt right into the water with the yeast, and I have tried adding it to the flour instead, as the chef dogma would have you do. There is no difference in the rise. Salt does, however, interfere with the chemistry involved in the no-knead process. You can get a better texture if you let it rise without salt, and then fold the salt into the dough before you proof it. I tried that. I don’t think it makes a big enough difference to be worth it. Q: Why didn’t you shape the dough with some fancy folds and pleats? A: I’m lazy, and this dough is extremely wet. I’m not sure if I could shape it if I wanted to. But the wet dough makes for a very open structure and makes kneading and punching it down totally unnecessary. Q: Why do you have so much milk in your fridge? A: I have very small kids. And the open pint was leftover from a weekend car trip. Q: Why do you have X in your fridge? A: Keep in mind that I am not the only person, or the only adult, who uses that fridge. Q: Why didn’t you put sugar or oil in the dough, like you do with your pizza dough? A: The sugar and oil in my pizza dough is chiefly there to enhance browning. It’s hard to get pizza crust sufficiently brown in a home oven, and those additions help. This dough, in contrast, is plenty brown by the time the inside is cooked. Q: Are you bothered by the memes? A: No, but I do think jokes about alcoholism are kinda dick. Anyone who has lived with it themselves or via someone they love knows it’s not funny. Or, rather, the joke had better be REALLY funny to earn it.

It's only too wet because you didn't knead in structure. A few folds isn't rocket science! edit: I don't wan't to come off as a nay sayer because i know for a fact that the bread he just made is good. I'm just saying that yes there is a way to incorporate scoring and it involves very easy folds. Something children can do. *source: have taught children to do thus.

I'm making it right now, and I plan to spray with water first, but if it turns out I'll come back here when I've tried coating it in olive oil, and again when I try white wine. Hopefully my bread didn't go mouldy while fermenting - I haven't seen any comments about that but my bread has a few black spots. Might just be impurities in my flour, though

@@juju-been Most likely not. White wine (or most forms of wine, really) has a relatively low alchohol content (around 14%, I believe?), and isn't particularly flammable. Maybe you'd get some embers in the oven, but they should burn out relatively quickly. Worst case scenario, all that gets a bit burnt is your face, unless your oven and house are made of oil-soaked paper.

Hey Adam! As an ardent home baker, I have a tip for more effectively utilizing steam, i think it would be right up your alley! I have a deep (4 or 5 inch) disposable roasting pan that i got for like 78 cents at Walmart. I get my oven super hot, mist the inside of the roasting tray thoroughly, then INVERT it over my dough when it goes in, thus creating a much smaller oven around the dough--an oven now full of near-instantly vaporizing steam. It really concentrates the steam over the loaf and works great. And that's why i mist my pan--NOT my loaf.

Amazing! This really works! Couple things with this recipe, though: • You’ll end up needing more than 1/2 a cup of water. That’s so you can add a touch more while you incorporate. • Just use your hands to mix if the spoon technique starts to get difficult. Handle gently. • Wait a week before baking. It’s worth it. • Don’t wait more than 30 seconds before spraying your dough once it’s in the oven. The top hardens almost instantly. Spray every 30 seconds the first 3 times, then every minute for the next 5 times, then every 3-4 minutes after that. • If you don’t have a fancy convection oven, pull the pan out and rotate it 180° half way through your bake. You’ll get a more even browning that way.

@ophello Thanks for the notes! But I'm not sure about the handle gently part. Handling dough gently is almost always to be sure and not deflate it after a lot of fermentation has occurred, which would definitely not be the case here as it is in the mixing process. Is there some other reason you note to handle gently here?

We need more lore on the Adam Mirror Universe. There seems to be an empire and legates, so I'm assuming it's a universe where Rome never fell. Alternate Adam seems like a very loyal subject of the Empire, praising it's continued existence after every sentence, so it likely excerts very strict control over its citizens with a strong sense of nationalism. Also moustaches and goatees never fell out of style or are simply very popular in the greater Empire. Judging from baguettes being a new thing in the 21st century, I'm assuming the nation of France never developed, or only recently broke away from the greater modern Neo-Roman empire. Oh and kitchen burners were never invented, or were recently developed to make inferior creme brulees to the traditional imperially mandated clear-topped ones so the technology level in this universe may or may not be on par with our own timeline.

Interesting theory, although I think an independent nation of France is quite possible. Mirror Adam is speaking English that is identical to our own, suggesting that the socio-linguistic history of England proceeded in much the same fashion, which leads me to believe that the Norman Invasion still occurred in the 11th century... Thus necessitating the existence of the nation of France.

I think a better explanation is that he means British Empire and thus the mirror universe is one where American Revolution never happened(or it did, but Loyalists won, so the US is still part of the Empire, and the Empire is still standing).

Honestly never really dove into the bread making world because there seemed to be so much that went into it but this recipe definitely makes me wanna try it. Never having made bread before, I've been using this recipe with a few adjustments and some success. No spray or steam, no stretching, more yeast(maybe my fridge is colder), lower temperature and soy sauce instead of plain salt. I like a thin soft crust like a pita's, the key to that seems to be not baking too long. So thanks!

FYI this is very traditional bread in south Germany. They are called „Seele“ (soul) and are usually baked with caraway seeds and salt on top

The no-knead method is the way to go, especially if you're working with a sourdough starter. I got into that method a few months ago, and I'm making better loaves than ever before. I've started making a giant batch of soughdough (1200 grams or ~8 cups of flour total) at the beginning of the week and sticking it in the fridge, then taking out big chunks every other day so that I always have fresh bread. They say the gluten starts to break down if you let it sit too long, but I've had 5th day dough turn into amazing bread, so I must not have reached that point yet. The bread is always great - lots of sour flavor, lovely brown crust, and an interior so moist that you can hear a squishy sound if you hold the bread up to your ear and squeeze it. And as Adam shows here, it's easy to just plop it on a sheet of parchment paper and toss it in a steamy oven. It's surprising how this "artisan" bread is actually much less work than a regular white bread loaf recipe from a cookbook.

I made the dough just like he did and left it in the fridge for 1 week. It smells amazing but there are some black specks in the dough. Is it mold? I read somewhere it could just be bran particles oxidizing, but I can't find anything concrete. Any advice? Thanks in advance.

To omit the spraying step, just fill an oven tray with water and put it in the oven to create steam.

In these crazy times outside, I tried this recipe a couple of times this week. My first experiences with baking bread. 1st try was exactly according to Adam's recipe, due to lack of time only 1 day of rising. Result was good, but taste was a bit boring. 2nd try was with a bit more salt and 2 days of rising in the fridge. Much better, but still not up to my taste. 3rd try. I replaced one table spoon of flour with whole wheat flour. added 1 tablespoon of olive oil. 2 days in the fridge. very good next step I want to try longer rising, less yeast, and we will see what else

Hey Adam, love your videos. Question: I've left my dough for this in the fridge for 4 days now. It doesn't seem to have noticeably risen, and there are small black spots dotting the surface. Is my yeast dead, or is this normal?

Best bread ever. Tip for enhanched flavour: instead of dry yest, use a tablespoon of the the previous batch. I leave it for up to an hour on the kitchen counter before it goes to the fridge and bake it 24 later. Best bread ever

I have baked regular white bread the traditional way (kneading, with 2 rises etc) for many years, but I've wanted to try a No Knead type of roll or baguette for some time now ... I'm so happy that your video was on my suggested to watch : ) ...
