In your camera ambient light settings means whatever the available light? Can you explain this in more details or you have video about that I can watch.
It's pretty easy, shut your flash transmitter off and look at your live view (dslm). Now put the ISO as low as possible, set your shutter speed to your cameras flash sync speed (depends on your specific camera model and can be googled) and set your desired arpeture (used as a creative tool). If you still see anything more than a black screen now, stop down the arpeture further. Once you have a black screen, you successfully cut out all the available light and are only lighting your photo with your flash. Turn your flash on and start shooting. Same can be achieved with a DSLR without Live View. Simply take a test shoot after setting up your ISO, shutter speed and arpeture. If it's completely black, you're good to go.
how much will surrounding light affect the outcome? Imagine office overhead lights or something like that. Is that what gets removed when you expose for the background?
Yes, basically you turn off your flash and change your settings so that the frame becomes mostly dark. Then turn on your flash and adjust its power until you get the look you want
