Far Breton is a traditional cake from Bretagne (France) that is made with both prunes (dried plums) and fresh plums. It is similar to Clafoutis (which is made with cherries) but has less flour in the dough. You will see that after baking and chilling in the refrigerator, the dough of this flan cake resembles to vanilla custard! The butter, with which we grease the form in a thick layer, has the role of an ingredient, not just a non-stick agent!
Ingredients:
approx. 800 g plums (pitted) - 1,8 pounds
4 eggs
125 g sugar (you can put 150-175 g if the plums are very sour) (1/2 cup or max. 2/3 of a cup)
100 g of flour (2/3 of a cup)
a good pinch of salt
600 ml of cold milk (2.5 cups)
1 tablespoon of vanilla extract or 2 sachets of vanilla sugar
50 g of butter for greasing the form (3.5 tbsp)
We used a 28 cm (11 inches) diameter and 5 cm (2 inches) deep baking form.
