I need some of those in my life! Overdoing the flour is the one thing I fought for a long time while learning to make dough. it is an art. I actually ended up putting my mixer away and making bread by hand to learn the feel then I could get the look down. thanks for showing it! it will help people.

Love your recipes and the videos are so helpful! If I made these the day before and let rise for the six hours would it be ok to then put in the fridge overnight and bake in the morning?

OH Mary, I know you get up much earlier than I do (there’s no chickens to feed at this house). By the time I would start making these it would be after dinner when I would be baking them.😂. I saw in the recipe that you can put them in the fridge till you’re ready to bake them. After I proof them, can they sit overnight in the fridge so I can bake them the next morning? Thanks for all your help. I especially appreciate when you explain what happens when you put too much flour in. I sometimes have probs. with my bread and don’t always know if it’s too much flour, too much proofing, or some other prob. so it helps to hear what happens when you make mistakes.

@@margaretcape1397I saw on another RU-vid video that after the bread proofs you can put it in the fridge overnight. I tried it and it worked. I was making an artisan sourdough bread. Hope that helps.

Looks great! I've been making sourdough for a while and yeast bread for years. My starter is very bubbly and smells great, however it barely increases in size, maybe by a quarter. I use rye and wheat flour. It seems to bake ok but not spectacular. Any suggestions

Have you tried adding a few raisins to the starter to get it going? You can take them out after it gets super active.

@@TheRoseHomestead never heard of that but I have craisins at home and will definitely give it a try! It's very bubbly and smells yeasty. Bread is nice. If I could figure out how to attach a pic I would🤔

Mary ❤OMG 😊my favorite sweet roll-cinnamon rolls. Ouch 😮I would love to make these but the carbs totally scared me from making these delicious cinnamon rolls. Do you think I could use sugar free maple syrup? And would they come out ok with 100 whole wheat flour. Thank you for sharing such delicious recipes. One more question… using all purpose flour-bleached or Unbleached, for baking which would you recommend?

From my experience, hard white is the closest. The next in line would be spelt. The thing is if you want a more all purpose flour you will need to sift out some of the bran and germ. This will yield a much lighter flour.

I love to use a third to half kamut and two thirds to half hard white wheat. The kamut makes it a bit softer and it does taste amazing. I’m just trying sourdough for the first time but I’m guessing the mixture will give the same result.

I absolutely love the simplicity and detailed instructions of this recipe. You explained everything so well and in simple terms. ❤ I’m trying to make it tonight and when I got to the cover and proof part, at about an hour into it my buns started to look very wet. Like some liquid was pooling around them 🤔 I’m going to let them rest as is and let them chill for a few hours. Could it have been that I buttered the pan? I’m just disappointed that they look so wet and I’m afraid of an epic fail 😢 Help!

I'm sure they are just fine. The butter melts as they sit but when you bake them it turns into an ooey gooey yummy glaze in the bottom of the pan!

@@TheRoseHomestead I think I left them out too long. I’m going to bake them any way. My husband had one job: to put them in the fridge after 5 hours on the counter and he forgot 🤦🏼‍♀️🤦🏼‍♀️🤦🏼‍♀️

Question for you sweet lady… after they proof can I stick them into the fridge for up to 10 hrs or so until I can bake them? My work schedule messes with my newfound baking after finding your channel!!! Thanks for the answer in advance!!!🎉

Yes you can! You can actually leave them in there for up to a week.

The biggest piece of advice for kneading by hand is to do it fast and use as little flour as possible during the kneading process.

As long as you knead it long enough, the end product comes out fluffy and soft.

Mary, can this recipe for cinnamon rolls be used to make cinnamon bread. Can I shape it into a loaf instead of a log and bake it as bread? Have you tried this. I would prefer the bread to the rolls. Thanks for your help. Barb

I made these Saturday, but they're not soft at all. I kneaded for 10 minutes. Is that why?

Usually that means that a bit too much flour was added to the recipe. Try holding back the flour a bit next time and have a more slack dough. You want it workable but not stiff at all.

I use a Sapid mat. I make sure not to cut rough on it. I usually use a bench scraper which doesn't have a sharp edge.

Usually when that happens to me it's because I added a little too much flour. Try adding just enough until the dough forms. It may be a bit sticky but the rolls will be much lighter with less flour.

No fat. The butter that is used to hold the cinnamon and sugar was fat enough for us. Coincidentally, I forgot the butter in this video ha ha! But they turned out great still!
