I started canning again last year as my own silent protest against inflation. It literally cut our family food budget from $1500 a month to less than $500 a month. Plus the food we eat is so much healthier which is priceless. I’m not done with my inventory but I’ve organized our 1500 jars/cans/bags/buckets, labeled some I forgot, and put up the rest of my empty jars with meals in jars and ginger syrup, elderberry syrup and extra chicken soup for when we catch whatever’s going around. Thanks for talking me through this journey to raise our quality of life!

I love doing your pantry challenge along with the three rivers challenge and then add Canuary-O YEAH! I have a very diverse pantry of home-canned goods, dehydrated goods AND I seel Thrive Life so freeze-dried. Yesterday I had 2 people helping my higher-functioning autistic child cleaning her room. One of them said I needed to "sell some stuff" or get rid of some things. The "things" she was talking about was my home-canned goods items in my daughter's closet, 2 pressure canners (of different sizes), my water bath canner, my canning jars, extra lids, fermenting tools- I was FLOORED! I was like everything is neat, organized and out of the way and they are USED MONTHLY if not weekly to make sure my money is NOT wasted and MY FAMILY eats good, healthy, nutritious foods as we do NOT eat processed garbage. She shut up REAL QUICK.

I've really learned the hard way to keep emergency supplies very easily accessible. My spouse put all our kerosene lamps and crank-up lamps away - somewhere in the garage. The flashlights and batteries are in the same somewhere. Our power went off with no warning a few nights ago - and my spouse couldn't remember where they were stashed. The matches and lighters are, of course, with the lamps. And he'd decided to put the battery powered motion-sensing lights I'd placed on the staircase with the other lamps in this somewhere - he thought it made sense to have all the like things together. I will personally ensure that every room has a working flashlight, motion-sensing light, and either a kerosene lamp (clean, filled, with a trimmed wick and a box of dry matches) in every room. It was no fun stumbling around in the dark trying to find things. Luckily I had some votive candles and matches at my desk so we could get around. Likewise, I think it's important to have emergency drinking and cleaning water in the kitchen and each bathroom. Currently our supplies are somewhere else!

We've had 2 major snowstorms this week and are down to -45 windchill and I've not been to the store for 12 days and we're just fine. So many people panic shop before a snowstorm but we just bought 2 gallons of milk well before the storms, not even thinking of them.

My home canned turkey saved Thanksgiving for 3 of us! Two family members were coming up for Thanksgiving. I swear, the moment they stepped in the door, I got sick, then the next day they did also. There was no way I could stand up long enough to make everything from scratch. However, my preps of turkey, dried potato flakes, stuffing, my home canned apple sauce worked just fine. It was simple but we felt like we were at a 5 star restaurant. Oh, I also opened a home canned jar of green beans.

Food fatigue can be a real problem. Even with easy access to grocery stores, we have all had the experience of standing in front of the refrigerator and feeling completely uninspired. Food waste tends to happen when we aren’t enthusiastic enough about something to eat the leftovers. When I can food, I usually use pints and half pints. My husband and I can usually eat a pint of something, dividing it between the two of us, for a meal. When the kids were still at home, I would do quarts. The thing I want to avoid is leftovers that go to waste. I can eat “ugly chicken” seven days a week if it is fixed differently each time. Having a variety of sauces and seasonings on hand, as well as some good cook books, makes all the difference.

With the most recent below zero temperatures that just came through, my pipes froze. Because of my well stocked pantry, I was able to easily change directions on our dinner plans. I didn't need to worry about needing water to make dinner (although I also have many jugs of water set back). I love the ability to change on a dime if need be due to such a well stocked larder. In this case it was a freezer meal to the rescue. Dinner used 2 utensils.

I have a number of food allergies that hit me late in life and I have a grown grandkid with other allergies. Son#1 has a gluten allergy. Almost no one eats read meat, some go low carb. I have learned so much over the years about food and so my preps are very varied. I don't think we will be in ant of much, as I have built up and continue to build up. I could never afford everything I have now. I also find it very hard to find certifiably GF corn meal or oatmeal without going into debt. I have spices, herbs, sauces, ilks, drink mixes, coffees, teas, water, juices, meats, fish, fruit, vegetables, grains, and even candy put away. Name it; I probably have it. There is next to no food waste in this house. Even the scraps are used to make broths or are composted. I have dried, dehydrated, canned, commercially canned and frozen foods.I am trying to cut down on frozen, but will utilize it for our foods now.

Yup, I understand this. My food issues have caused me to purge my pantries to make it what I can eat. Our pantry is lower carb, gluten free and low histamine. Lots of freeze dried certified gluten free single ingredient dried meats, vegetables and spices. I have recipes to make meals… and meals in a jar. Some are ready made meals.

I was very mindful when I started this journey of food storage. I love having meals in a jar when I just don’t want to think about what to put together, and I also love having single ingredient jars. And then there’s the freeze dried stuff. I can’t think of much that I can’t make with everything I have! We had layoffs at work last week. My manager, who has also been a long time friend was affected. I told him that this was one of the very reasons why I’m a Prepper. It’s not just about the apocalypse.

I just spent 10 days reorganizing my pantry and added 2 more shelf units. I had an overflow of jars in another bedroom that I was able to put in the pantry. I found a bucket of dry beans that I will be canning tomorrow. I feel so good going into this year. Each year I grow and can more of our food.

I was grateful for canned soup on hand over the last 2 weeks while hubby & I have been sick! It's not something we eat regularly due to watching carbs, but when you're sick, you just want soup & hot tea! It reiterated to me that even though it might not be something that we eat all the time, it's still good to have some on hand, so I replaced what we used when I ordered groceries to back-fill because you never know when it might just be what you need!

Variety is the spice of life as they say. This week for dinners: Fish sandwiches with roasted potatoes and sad produce; pulled chicken sandwiches with pasta salad; homemade sausage spaghetti (frozen) with salad; cheese soup with left over hamburger buns made into toasted garlic bread; ciopiini stew that included penne pasta; stromboli w/hot Italian sausage and side of broccoli. The only thing we bought this week is another case of water bottles that were on sale.

I took everything out of my pantry this fall an cleaned the shelf an checked dates an organized it. Took me 3 days, an check all my canned jars. Now when I buy something it got in back...hooray it's done

nutritional value, and diversity, yes/yes. my focus late last year was to focus on protein. [ already achieved dry goods/carb goals ] i gifted myself 3 freezers in 2023, and reached my goal by the end of the year, lamb, beef, pork, chicken, and fish, and vegetarian options. i am a home cook, i create stock from bones [ collagen ] creating gravies to give the dishes flavour, normally including a diverse range of vegetables, herbs/spices , while avoiding high levels of salt, and other miscellaneous contents to have control over what's going into by body. your spot on about the packets, little nutritional value, high salt, mostly carbs, the small quantities making cost high, in comparison to buying larger quantities of the ingredients and making the dishes up yourself. in 2024, i would like to diversify further on the bottled, canned goods I've accumulated so far, so when i am unable for whatever reason, can throw something together with either little cooking involved, or none. . i like that your practical, down to earth, talking too, not at, or lecturing down too, with a pleasant sense of humour. i am in my sixtieth decade, a mum of three children who live independent lives, who happily/thankfully lives on her own. it is the first time i have written on this topic, i promise if i comment again, it will be less verbose. i hope this year provides you, your family, and friends lives with good health, contentment/appreciation, happiness/joy , mysteries/adventures, and peaceful abundance. kind thoughts

I bought sale stuff to add to pantry, but this past week have been eating from my pantry. I wasn't really going to do the challenge, but this week has really been forced to...temperatures here in Alberta Canada are -30 to -48, we're in the deep freeze. Car won't start. Haven't run out of anything yet. If we do, it will be eggs and I didn't store enough carrots, milk but have powdered and evaporated milk.😅

Thankfully, I've been eating a ketovore/carnivore diet for over 7 years, so all I REALLY need to have is meat, water, and salt. Anything else is just extra, and I do prep other things to have on hand in case I want to use it for barter.

Suggestion…adapt ur oven recipes to stovetop ones (if u have gas range), because the burners can still be lit manually even if the oven pilot light is out (cuz that is electric based). Meatloaf can become meatloaf burgers, lots of bread items (including pizza) can be made on the stovetop; think outside the (oven) box.

Excellent idea! Also, for those of us on electricity only, it's good to have food options that can be adapted to and cooked, or heated, on a BBQ burner or camp stove in the event of an outage..

Great points on food waste, Lisa! Food waste is a huge thing for our household. We are freeze drying leftovers as homemade "MRE" meals after we make food for our family of 6. Awesome video!

My pantry challange is building my pantry. Since I'm way behind in this journey, I did have to go to the store for brown gravy packets for the beef I canned for beef stroganoff. But I didn't just buy what I needed for the recipe. I bought extra for the pantry. I've been doing the extra buying since watching you and your tips. I'm much further ahead than I was a few weeks ago. Working on those "holes" and saving for freeze dried goods now!

My holes were canned fruit. I continually forgot to think of fruit when in the store. Finally I got it together and have been buying 2 to 4 cans of fruit EVERYTIME I am in a store. I feel much better now!

I've been redoing all my food storage. Canned some meats out of freezer that I wanted to use. Had canned soup other day, just open a jar and put in small crockpot. Made chicken and biscuits other night from my ugly chicken. I've canned for years, but you have inspired me to try new things. Thank you again Leesa.

Leisa. I love cooking, canning and baking, preserving. This has always been a focus for me. I have been at this for many years. Food fatigue is a real thing. You have to plan long term food storage based on what you know. I would never put anything in my pantry unless I knew it was delicious and what we would eat.

My pantry challenge effort is finding whatever is getting older and finding a use for it. Dehydrated green beans I haven’t used are bulking up dinner for my dogs, dehydrated tomatoes are being powdered because I will use that. Pantry challenge is a great reminder!

I like to use older jars of jam in cakes and breads. Like a spice cake or pumpkin bread works well to sub in jam or apple/fruit butters. When I do it, I cut back on some of the sugar and oil too.

I know that the 72 hour, 1-2 week, or 3 month kits are not the best to rely on long-term, but I'll give someone who might be struggling one or two of the meals. This saves my pantry supplies for my family, but maybe I can make someone comfortable for a day or two. But I have no problem saying no if I have to.

@@JeannetteGiebe Hello! Ugly chicken is chicken legs or thighs that have been pressure canned with the bone and skin on. You would need a wide mouth jar then just push the chicken in raw. Pressure can for 90 minutes. The chicken really does look ugly but comes out tender. You can use the liquid to make gravy. It is easy and quick to make...no chopping before you can. Suttons Daze shows how it is done. Good luck!

The pantry challenge really makes you mindful of what is being pulled and how it can be used twice. Between store bought, garden, canning, dehydrating and freezing, my pantry is 'pretty good', but you really realize where you lack! Loved this share! GOD bless

Tonight I did an inventory of unsalted butter. During this cold I’ll be turning that butter in the freezer to shelf stable clarified butter.

You are absolutely right about food fatigue. My mother once had to eat turnips as a child for a whole month. Breakfast lunch and dinner. When that month was over, she never touched a turnip again. She passed away back in 2019. She never touched another turnip. That was back in the 60s when she was kid. They were very poor. Food was scarce much like today.

I’ll echo all you’ve said. And a tough spot can happen to any of us at anytime. I’m in my second Canuary follow along and I’m doing a no spend January too because wouldn’t you know it but 6 days after Christmas my refrigerator died. I salvaged everything out of it except 1/2 bag of frozen broccoli but we had to spend 2k for a new refrigerator. So my pantry is going to buffer a lot of that extra spending this month and next month, and also help me to get things rotated well and set me up for my garden planning for canning this summer and next winter. I’m thankful I’ve got a rockin Cantry!

In my teens, we were moving to Alaska, and our food was stolen in Canada. We had to go to a church to get some food because my parents were ill prepared (no money). Number 10 can of peanut butter was given to us and that was our protein. I underwent peanut butter fatigue and couldn't eat peanut butter for years.

Thank you for sharing so much good advice with us each day. I'm a new canner and I have been clearing things out of my freezer by canning and eating things. I have a list of things that I would like to get on my pantry shelves and these videos are really helping me. Like I now make my own bread for myself and my daughter's family. Doing these snow days I'll be in the house canning making room for my summers Farmer Market Hauls. Thank you so much.

I found a hole, and actually had one plugged that I never thought about. 😆Once every few months, I like to take a dinner night off. That happened to hit me this past Friday. I wanted BBQ. Pick up the phone and feeling guilty, when I remembered 😃 I smoked a turkey in Oct, and that baby was all cut up and in the freezer. I went from NOT wanting to cook, to shoot- that was easy and I still got my smoked meat fix. Today, I had some bananas that were about to go out..and I decided to make muffins- there was my hole, almost out of brown sugar. So, I have a list in the works for the next shopping trip. Oh, and I smoked some salmon today! I am enjoying this!! The menu is flat keeping me straight!

Just a tip / Idea: If you stock white sugar... just add a stash of molasses and you can make brown sugar as you need it and will never run out!

My 12 year old daughter was suddenly diagnosed with cancer. The type of cancer she had, we needed to be up at Helen DeVos Childrens hospital more than being home. So my very well stocked pantry and freezers allowed the rest of my family to still eat well. We saved money. My husband never had to go grocery shopping. Having a full stocked pantry made a stressful scary situation. Alot less stressful. That was one huge aspect of life I didn't have to worry about. I could focus all I had on my daughter. I am so grateful for your channel and the other channels I watch. That taught me and encouraged me to build my pantry and grow a huge garden. I thought I was doing it for a SHTF situation. Being a purple heart veteran, my mind tends to go towards preparing in a military sense. I ended up being prepared for a much more difficult battle. She is doing well and recovering well. Helen Devos Childres Hospital did an amazing job. Keep doing what you do. It does matter. You are helping others everywhere. ❤

I'm doing the pantry challenge, so far so good! I ran out bread last week so I reactivated my sourdough starter and now have 4 loaves in the freezer and one on the counter. I'd say one hole I'd have in a real "situation" would eventually be, cheese. I have 15 lbs in my garage fridge, so I'm fine for several months but if I had to go 6 months, or more, it would be a problem. So, I need to learn to make it! I've made ricotta but I mean cheddar and Gouda etc...

I’m doing the challenge and it’s just me. I’m learning so much and creating has been so fun. I am seeing what holes I have and have been keeping a list as I go through this. I’m going to push myself to not go to the store until March 1…..I’ve always been one to be prepared so I will accomplish this👍

Liesa I am all for having our pantries with good foods and that we will eat and to disersfy and know when you need to take account of all the pantry has to offer I love to can and have all kinds of things in my pantry from canned to dried It's a blessing and always a work in progress!! When Dennis died in 2021 I was still not back to work, because you taught me how to build a pantry, that is how I survived for the first year. So thank you For doing what you do for the food preservation community.

Wise advice. The pantry has helped us many time's, illnesses, job loss, covid etc. I'm loving the pantry challenge. We've done pretty good shopping wise, our large freezer now clean, rotated, had a few " surprises" we missed the last time but that goes to the compost pile for the garden. Thanks so much for this.

Pantry challenge is going pretty well. I am pulling from the pantry for meals but I have done some shopping on meat sales which I canned and added to the pantry. I picked up chicken, pork and chuck roasts on sale and canned it all. My stock is diverse from freeze dried, store bought, dehydrated, home canned and Azure Standard. I noted some areas I need to bulk up. I've been planning my garden and pulled the seeds. I can't wait to get started

For decades I have kept a well stocked pantry because that's what my mom taught me to do. Gardening and water bath canning were always a big part of it. However the lockdowns and time thereafter have shown me that there are far too many things we have been taking for granted. We can't plan ahead for every eventuality but there are many things we can do. I'm so thankful for the many encouraging, helpful and educational videos I'm seeing from sites such as this one! Because of them, I've had the courage to learn how to pressure can and dehydrate foods as well. It's opened up an additional world of home food preservation for me. Thank you! Please keep it up!

I would also suggest trying new and different recipes and thinking about what would you substitute if a certain ingredient were unavailable. This past year I worked on baking using freshly milled flour from wheat berries, which store for a very long time and have greater nutritional value. Also, learned to make Ezekiel bread which uses both milled grains and legumes. It is a complete protein and is often referred to as survival bread. I recommend the channels Breadbeckers and Grains and Grit.

Due to you and the whole Canuary thing and the popular pantry challenge videos I have gotten to work! I cleaned out my (hated side-by-side) kitchen freezer by taking a full inventory. We have 3 regular fridge/freezers. I also took care of the one in the garage. Now I know exactly what ready made meals I have, prepped ingredients like seasoned ground beef, and yet to be used meats, veggies, and fruits. Now I will meal plan and the prep. I don’t pressure can yet. LOL, that’s why I am now here😊. I do prep and freeze and look forward to do more and different types of preps. Thanks for the info and thanks for the push! (Dictated on my iPhone).

Got my pork canned today, plus set aside part of one half of a roast for dinner. My freezer is less stuffed. And I got 12 pints for the pantry.

Leisa I love your pantry talks. We just moved in September to our aging in place home. There were a few 2x4 wall shelves and my hubby just added middle shelves to narrow their height to help me fit more canned goods and supplies in. It’s fun as the move and this work helps me see my gaps and organize neater to fit more in. Also gthe cs me more rom for empty jars and canner. I really want a steam or electric canner to help me can more at once.

I learn so much from your channel. I never heard of worchestire powder. I buy the $1 bottles at WM. 2023 was first time canning in 40 years. I have 2 Presto electric canners. Just two in household but siblings, children and grandchildren love testing canning goods. They all had specific can good wishlist for Christmas.

Leisa has a ton of safe canning vids, especially ugly chicken lol. Also check the website for the National Center of Home Food Preservation, lots of great info in there too. In her canning vids, there’s usually a link to a usda book too.

Think about what your family likes, there are many great soup recipes.. Try one batch at a time in case you don’t like it, but you can always season it more. Just be sure to use recipes from approved sources.. Leisa has some incredible recipes.

I started canning about 6 months ago. Initially, I focused on just pressure canning meats. They can then be added to anything and even be used for pet food if needed. For myself, I currently prefer buying some canned goods, like organic beans. They are cheap, already done, & I can stack them so they don't take up as much room... I also like canning the meat because I get it on sale or in bulk. It is going up in price & some don't even want us to eat meat anymore. Best bang for my buck currently 😊 Plus, it could potentially be worth a lot in barter. I'm just starting to experiment with some soups & meat based recipes. 😊

I've been collecting books on how to eat out of your pantry. One has been helpful in flavoring pasta - taking plain buttered pasta and bumping it up with various flavors. I sometimes struggle with coming up with various ways to use what I have so it doesn't get boring. I've got variety but I still end up staring at everything and think what can I make. This week, I needed a quick dinner. So I took a home canned jar of beef stew, drained the juices and thickened them, added the rest of the jar and served the whole thing over noodles. Kinda like stroganoff but stewy.

Right now we have had a huge deep snow for us. 9-12 inches in a southern Tennessee town that almost never gets more than a dusting. It is not a crisis - we still have power but in our area people do not have much experience driving on snow. We also are facing a week of extremely low temperatures and high winds. My pantry can allow me to stay off the roads until spring. It is comforting to know I have variety and enough.

I haven't had a chance to do inventory yet this year. My parents had a medical emergency...triple bypass and then a pacemaker. He had just been moved to the rehab floor and then back to Cardiac ICU for blood clots. My mother cannot drive. They sold their house in October and have been living in my basement while their new house is finished and now the weather is impacting that schedule. Stressed doesn't begin to describe life right now but my well stocked pantry has made getting meals on the table and not having to grocery shop on top of everything has been a tremendous help.

we moved this year so we are building a new pantry. I only had space available in our crawlspace which is about 40 inches high so not very convenient but I have been following the pantry challenge and canuary so once I am done it will be organized and filled with some of the new canuary recipes. 😊

Tried some of the stuff from our Thrive Life order that arrived last week. Hubby and I were both pleased. Our area had a two hour power outage this week. Was with a group of friends a few hours later who said with shock, “wait….you had hot coffee this morning? How in the world did you do that?!” Geez…..camp stove, french press, and ground coffee. What surprised ME was that it appeared none of them had any preparation to feed their families if they had a power outage. SMH

And while with the same group of friends two were lamenting they had no way to charge their phones. For those who don’t know there are multiple solutions. A solar powered charging station which can even charge your tablet and hearing aids. And there are solar powered lanterns that you can keep charged and on your shelf that you can use to charge your phone.

We learned the hard way about having a prepper pantry. Our daughter and 2 teen kids had to move in after a divorce then our paid off car was totaled by an uninsured driver. Adding 3 extra people and a car pmt. almost broke us financially and mentally. Lesson WELL learned.
