Dive into the deliciousness of our top-notch pork belly (Salo) in a jar - a family favourite! No fuss, no cooking required. It's the tastiest treat without the heat. Get ready for a flavour-packed experience that everyone will love!
Ingredients:
Pork belly: 2 kg (4½ lb)
Water: 1 l (34 fl oz)
Salt: 150 g (5.3 oz)
Bay leaves: 15 g (½ oz)
Black peppercorns: 10 g (0.35 oz)
Garlic: 20 g (0.7 oz)
Mixture 1:
garlic - 10 g (0.35 oz)
sweet paprika - 10 g (0.35 oz)
oregano - 10 g (0.35 oz)
Mixture 2:
garlic - 10 g (0.35 oz)
Dill- 50 g (1.76 oz)
For the first stage:
1. Bring 1 litre of water to a boil and add salt, bay leaves, and black peppercorns. Mix well until the salt is dissolved.
2. Once the mixture is brought to a boil, continue boiling for exactly 5 minutes.
3. Allow the mixture to be cool.
4. Cut the pork belly into middle-sized pieces.
5. Wash the pork belly pieces thoroughly.
6. Pat the pieces dry with a clean kitchen towel or paper towels.
7. In a jar, create layers: first layer garlic, bay leaves, and peppercorns; then add a few slices of pork belly (vertically). Repeat until the jar is full.
8. Pour the cooled saltwater mixture into the jar, ensuring the pork is fully submerged.
9. Seal the jar and refrigerate for 5 days.
After 5 days:
1. Remove the pork from the jar and wrap each piece in parchment paper.
2. Leave all wrapped pieces in the fridge.
When ready to use:
1. Create a mixture with dill, garlic, sweet paprika, spicy paprika (optional), and oregano.
2. Unwrap the pork pieces and coat them in the spice mixture.
3. Cut the pork into small pieces and enjoy it as a sandwich filling.
