Controlled burns are almost always done for ecological purposes. Besides reduction of fuel, preventing much worse uncontrollable scrub fires, prescribed fires can be very beneficial for some of the ecosystems in Florida. They clear away invasive plants, and can be used to control plant disease in native plants as well, among other benefits. Besides those intended to clear space for development (which is a very small percentage of controlled burns) it is almost always to the benefit of not only us but to the environment.
If you go to the deepest dark in Florida I knew plenty of old people that would eat these guys. They were old enough I think it was depression days but yeah they would eat them.
