Its funny you ask that. I was down in Vance AL doing construction on the Mercedes Benz plant before it opened & I couldnt find any country ham. I asked & someone told me I was to far south, its biscuits & gravy country down there

My grandfather lived in Greenville Alabama, he was born in 1892 and he cured and smoked hams, beacon, and stuffed sausages. He had done this all his life till about 2 years before he passed away in 1965. His hams were the best I have ever eaten I remember those times so well, he raised his own hogs and had them ready to butcher when cold weather came. That's the problem now with curing meat in Alabama today the weather has changed so much that there's not enough cold weather to cure the meat like it was back then. You would have to have refrigerator to cure the meat good. Then you could smoke the meat.
