Yes it is possible to translate Pekiti to any weapon. I have seen my teacher Grand Tuhon using the Tonfa. The same principles apply to any weapon as long as you compensate for the weapons characteristics. Is it an edge or impact weapon, how long is it, what shape is it etc etc. I don't know how to give you a clear way of using the Tonfa with Pekiti principles over a text reply like this. And I also don't have access to one currently to make a video about it. If you're already familiar with Pekiti then I'd suggest using the Tonfa like a stick, then using it like a long knife held in the Pakal Grip. When I say using it I mean holding it still the way it is meant to be held but in one configuration the Tonfa is extended away from you and in the other it is covering your arm. Play around with it in this way and you should get some clarity. I'm sorry I can't give you a clearer answer in this medium right now. The next time i come across the weapon I'll make a video on it.
