I've been predicting that kelp would be next big sustainable food for over the past 2 years and it's coming true! So we made a veggie burger with kelp.
We have not tried it so I can't say if is as good as mine but the company currently making kelp burgers is Akua akua.co/pages/...

I wish Taku created the Outdoor Chef life Cookbook. Where Taku created a book and sold it on his website, A cookbook for every meal he's ever created featuring the recipe since the start of the channel. List out the ingredients and ill re-create them at home, Ill gladly pay $50 for that.

My grandma fed me kelp salads as a little boy. She will be 101 this May. Kelp is a super food.

I've been researching alot about kelp and sea farming. It's a very valuable and a sustainble source of agriculture. It's definitely the future of food resources. I would love to start my own sea farm soon too. One day.

@@fdsaffff Sadly the Shuri Castle burned after I left Okinawa. It’s truly saddening for a historic place like that to have burned. I’m glad to have walked those grounds, along with other places.

Net positive carbon footprint is possible, we just need to be willing to shift our traditional thinking. Asians know that kelp isn't just healthy, it's literally delicious!

My grandmother, Chilean, would make french dish with kelp, called cochayuyo, cream and cheese. You could buy them in dried wheels at the open market. Many Chilean dishes with cochayuyo, kelp.

We purchase large long fronds of dried unsalted kelp from Korean grocer - in large bags. we cold brew some fronds in distilled water in the fridge and the chilled drink is delicious with a squeeze of lemon. The spent kelp fronds we make into a tasty pesto for lettuce wraps.

Got a challenge for you. A fish is that requires good ideas to control. And a fish that has a terrible culinary reputation in America. The carp and asian carp. Would love to see a fishing episode for either and a good tutorial how to clean, if you're not aware of the Asian carp problem in the United States it's taking over a lot of waterways and more recipes to cook them the better. And from personal experience carp are quite entertaining to fish for

Maybe it's because the clocks have gone forward in the UK, but this Taku Tuesday became a Taku Wednesday. I almost had a panic attack when midnight came! LOL

Taku and Jocelyn, another nice video!! I retired here in Okinawa about 18 months ago. I think they have something like 1500 people 100 years or older here. Quite a large population considering Okinawa's population in around 1.5 million people. Keep up the great work,, please plan on coming back here!

I want to make a kelp burger here in Japan! I'm in Hiroshima but will be on the look out for kelp to try to make some locally sourced kelp burgers of my own- thanks so much for sharing this video and information!

I think this is one the underrated videos in your list of videos. Maybe ppl just don’t understand or are afraid of kelp? But it’s clear that you truly believe in kelp as a great sustainable food source and that this burger was freaking bomb!!

maybe turn half the kelp into a paste (in a handblender) and using it as binding agent for the burger ingredients and yeah make four patties instead of two.. more fried surface area is better.. looks dope though.. got me hungry for a kelp veggie burger..

Looks delish. Most veggie burgers suck, this could catch on. Kelp has been a "health" food forever. I remember my mom giving us kids kelp tablets 60 yrs ago. Great episode.

For those of us who basically never get to see the ocean, being in land-locked San Jose, any Japanese market will have all kinds of seaweed and most of that is farmed so it's sustainable. Fresh is always better and more fun but for someone like me, 30+ miles from the sea, I watch these things then go "fishing" in my beloved Asian markets.

I wrote a paper about creating piezoelectric kelp farms on coast lines for not only energy creation but for environmental creation. the piezoelectric sensors in manmade kelp would utilize the oscillatory motion waves would create and transfer that to an electric current to be able to provide power to local areas

I think Jocelyn hit it on the head. Veggie burgers and vegetarian food in general should never be looked at as a replacement. IMHO here in North America we tend to want to to do just that. Vegetarian cuisine around the world, think India, China, Vietnam, make amazing vegetarian cuisine highlighting the vegetables with spices and herbs. What you made just there was enabling us to look at vegetable and alge in a way that can become more approachable to North American palates. Our insatiable need for commercial farmed commodity meat will soon become untenable for the majority of our population. Do to rising carbon pricing, social awakening, rising CO2 emmisions from commercial meat production. This was a really smart post, if this relocated Texan/Canadian can get behind vegetarian cuisine, including seaweed products, insects, man, I really hope we all can. Sorry for the rant. Just brought out the passion of a chef, me. Thank you Taku and Jocelyn.

I spent a couple years on Okinawa. Had a great time all over the Island and in the water. Great people when you get out of the cities. Just like Rural people anywhere.

Im not one to eat a veggie burger, not because of any specific reason. I just never had the urge to try it but not gonna lie, that finished product had my mouth watering. I dont liked the idea of black beans in the patty but after it was made I was like "damn, that actually looks good."

Ocean Power Technologies makes a buoy that generates electrical energy. The PB3 converts mechanical wave energy into electrical energy. This could be beneficial to offshore kelp farming! Not only that but also fish farming. Ocean farming in general would benefit from this tech.

My friend researched and recreated an ancient Celtic recipe that called for seaweed! If you live by the sea that's a great food source. It's not just for the cultures around the Pacific Ocean.

Yeah Porter! What if you fried the kelp after boiling to make it crispify a little, it would remove the slippery? More oil in the pan. Crispy outside.
