我会做仙桃了！ 仙桃奶冻： 1、水蜜桃洗净去皮切丁，2片吉利丁片泡冰水。锅中倒入200ml牛奶，100ml淡奶油，15g白砂糖小火加热至微微冒烟，放入泡软的吉利丁片拌匀。 2、倒入模具后加切好的桃丁，冷冻6小时左右取出。 3、500g白巧克力隔水融化，往奶冻底部中间插入筷子，放入白巧克力中均匀裹上一层，装盘撒草莓粉。 仙桃白玉卷： 糯米皮： 1、85g糯米粉、25g玉米淀粉过筛，加25g白砂糖、120g水和少许粉色色素，拌匀调至淡粉色，盖保鲜膜，水开后上锅蒸20分钟取出，加1小块黄油揉搓匀。 2、撒少许面粉，擀薄冷藏1小时。 戚风胚： 1、分离6个鸡蛋的蛋清和蛋黄，分别倒入无水无油的干净容器中，蛋黄加45g绵白糖，打至颜色略微变浅，再加75g色拉油，打至完全融合。 *蛋壳不要戳破蛋黄，蛋清里面不要掺到蛋黄，否则会影响打发。 2、用牙签加入少许粉色色素，调至橘粉色。拌匀后加82.5g牛奶混合，筛入90g低筋面粉，搅拌至光滑无颗粒状。 3、75g绵白糖分3次加入蛋清中，打发至中性发泡状态。（提起打蛋器有软尖角） 4、蛋白霜分3次和蛋黄糊混合均匀，注意顺时针轻轻翻拌。取28×28cm的方形烤盘，铺油纸，倒入蛋糕糊，把面糊表面刮平并轻震几下出气泡。 *不能用力快速搅，也不能搅拌次数过多，否则蛋白霜消泡会影响蛋糕的蓬发。 5、烤箱150℃预热10分钟左右，中层上下火150°烤30分钟。 6、取出蛋糕胚，盖油纸翻面晾凉。轻轻搓去蛋糕表面深色的蛋糕皮，用锯齿刀切去边角，放入模具。 桃子慕斯： 1、15g吉利丁片放入冷水中浸泡软化，取出挤干多余水分，放入奶锅中隔水加热至融化关火，略微冷却后倒入120g酸奶拌匀。 2、180g淡奶油加50g白砂糖，打发至6成。（奶油略微有纹路，保持流动性，类似奶盖） 3、分三次混合打好的奶油和酸奶吉利丁糊，用牙签加入少许红色色素调至淡粉色，刮刀翻拌均匀。加入桃丁拌匀后倒入模具，轻震出气泡后冷冻1个小时。 4、取出脱膜，慕斯蛋糕切条放到糯米皮中间，四周涮上糖水（慕斯面朝下放置），用糯米皮裹住慕斯蛋糕，修去边角，冷藏1小时。 蜜桃气泡水： 1个水蜜桃洗净去皮切丁。桃皮入锅加没过桃皮的清水，中火煮至清水变粉（5-8分钟），捞出桃皮，放入桃肉丁，中火煮至桃肉上色，关火放凉（浸泡一会让桃肉上色）。杯中先放入桃肉和适量冰块，倒入气泡水，再插入2支迷迭香。

For those not familiar with the reference of the Queen Mother, this refers to the Queen Mother of the divine courts from Journey to the West who is famous for a peach orchard full of a specific type of peach called pan-tao, known in the west as donut peaches. The peaches are known to grant longevity and they rarely fruit so she is very proud of them.

MOCHI COATING: 25g corn starch 85g glutinous rice flour 120g water Butter (Red food colouring pigment) SPONGE BASE: 6 eggs 75g vegetable oil 82.5g milk 90g cake flour 120g caster sugar (45g, 75g) MOUSSE: 15g gelatine sheets 50g granulated sugar 120g yogurt 180g whipping cream Peaches MOCHI COATING: 1. Into a bowl, sift in the rice flour and cornstarch. Mix in the water and sugar until fully combined. (For pigment, add until a light pink colour is achieved.) 2. Cover the bowl with cling film, and place into a steamer. 3. Steam for 20min. (Wait for water to come to a boil first) 4. Remove from the steamer and the bowl, add a little butter. Rub well. 5. Sprinkle a little flour (rice flour) onto a flat surface (baking tray, chopping board etc) and roll out. 6. Refrigerate for 1 hour. SPONGE BASE: 1. Separate the whites and yolks of all eggs into two clean mixing bowls. Cover and set aside the whites. 2. To the egg yolks, add 45g caster sugar and oil. Beat until the colour becomes slightly lighter. 3.(For pigment, add until an orange/pink colour is achieved- a peach, if you will!) 4. Add in the milk, and sift in the cake flour. Stir until fully combined, batter should be smooth and not lumpy. 5. With a handheld mixer, beat the egg whites and remaining 75g of caster sugar to form a meringue. (Sugar should be added gradually, preferably in three intervals). You’re done when soft peaks form and hold. 6. To combine the two mixtures, add a third of the meringue at a time, folding in gently to conserve the air. 7. Preheat the oven to 150°c. (Ideally allow to preheat for at least 10min) 8. Line a shallow square tin with greaseproof paper. Pour in the mixture, and even out the top. (About 2/3cm thick). Tap the tray on the counter to relieve any large air bubbles. 9. Bake for 30min. 10. Remove from the oven. Cover with greaseproof paper, flip, and allow to cool. (On a cooling rack ideally) 11. Once cooled, gently rub/peel off the brown cake crust on the surface of the cake. 12. Place your square mold (28x28cm) on top of the cake and cut it to size. 13. Press the cake into the bottom of the mold. MOUSSE: 1. Soak gelatine sheets in cold water. Remove excess water and transfer into a ‘milk pan’ (small pan with handle that fits into another.) 2. Heat it over water, until fully melted. 3. Turn off the heat and allow to cool slightly before adding in the yoghurt. Mix well. 4. In a mixing bowl, beat whipping cream and sugar together until the texture changes a little but I’m still runny. 5. Add in the gelatine mixture gradually and stir evenly with a spatula. Add in the diced peaches (about 2 or 3) and mix well. 6. Pour into the mold, over the sponge. Tap against the counter to release any bubbles. 7. Freeze for 1 hour. TO COMBINE: 1. Remove the mochi from the fridge and set aside. 2. Remove the mold from the freezer. Cut the mousse cafe into strips. 3. Place the strips (mousse-face down) in the middle of the mochi coating, to form a baguette shape. 4. Using simple syrup(sugar and water), wet the mochi and wrap securely around the filling. 5. Refrigerate for 1 hour, and then slice to serve.
