Even though the video makes this look easy to do you can tell they are extremely talented and skilful workers. They work at such a fast pace, very impressive to watch.
Julian Mondragon - the success of a particular youtube channel made by a candy store in Florida. Now RU-vid believes everyone interested in any sort of artisanry is interested in candy making.
Wow, the last time I watched this type of video/these videos, I saw them making the candy mostly using their hands and tools like scissors, etc. It's a long time ago and now, it's the first time I saw them using these machines. :)
A lot of the work is very physical and sometimes a bit dangerous with the open flames. The people on the lines are very fast but must get bored after a while but they make amazing candy.
I haven't think about how to make candy. After I saw it, I notice that the process is same with Korean style candy '엿'. And I was shocked that making candy beautiful. At the start, I can't imagine what will it be. But when it completed, it looks kind of art.
It may seem strange, because a lot of process could be only machine. But there is just something.. something different when a human makes the product. I cannot describe it, but if feels like craftmanship, instead of a product. The rest can only made by humans, because sugar doesn't want to do what you want it to do. Sugar is by origin a crystal shape matter, however we put things into it (like vinegar), so it could never take that crystally form again. It acts strangely sometimes. Unexpected. You put it between your hands and you would think it to go downwards, but if it stops than instead flows at the sides for some reason. Even in a set, conditioned enviroment. But who knows, maybe the owners just want to guards the tradition.
Dang I didn't know candy canes started so huge lol. I want to eat that giant slab. Is there actually some where you can get and eat candy or candy cane before it hardens? it looks so good soft.

GT: ShesMyWolfie cx is a dickhead I'm not an expert but after watching dozens of these videos I've noticed that the candy isn't sticky when they're working on it - it's very smooth in their hands. So maybe no? Fuzz and lint wouldn't transfer if it wasn't sticky
