OLD SCHOOL TURKEY STOCK
This is what I use to my old school giblet gravy and old school cornbread dressing
That's the key to making it taste good
A good flavorful turkey stock
WHEN THIS STOCK IS SIMMERING ON YOUR STOVE IT WILL SMELL LIKE THE HOLIDAYS
The recipe is easy
3-4# turkey necks
1#turkey tails(optional)
1 largely chopped onion
1 largely chopped celery
1# largely chopped carrots
1 sprig of fresh thyme
1 sprig of fresh rosemary
2 bay leaves
2 tablespoons kosher salt(OPTIONAL)
2 tablespoons chicken bullion ground
4 quart water
Brown Turkey necks and turkey tails in 350 degree oven until completely dry and browned(about 1 hour)
Add vegetables to the meats and brown in oven for an additional 30 minutes
Remove from oven
Add all meats ,vegetables and all other items to large stock pot and simmer for 5-6 hours(minimum 4 hours)
Strain and chill
You can freeze for later use
Makes about 4 quart TURKEY stock

Chef Jeffrey the only difference is I use stock is I use turkey and chicken I just called mine a poultry shock! I don't know how true this is but here in Virginia stuffing and dressing only means that dressing has meat in it and the stuffing just has the vegetables and in my family we put stuffing inside the cavity of the bird and I know a lot of people are going to cringe by me saying that but that's the way I was brought up

Yep! I follow the Chef's recipe. But I use both chicken and turkey, and I make an extra large amount and freeze it so I can use the stock for soups, beans , and stews throughout the winter. I grew up with my family using the name stuffing and dressing. It wasn't until I grew up that I realized there is a difference 🤷🏾‍♀️. Happy Holidays!

That's right we don't do stuffing either. We do dressing. Giblet gravy. Put some meat inside the dressing too.

Unk I can’t believe after all these years you done motivated me to make a whole entire pot of broth I usually use the broth from my turkey when its done and stretch it with store brought stock but I’m letting u take the lead in my kitchen this year so this here recipe method will be mine and I’m excited about it! Btw unk on ya last video you mentioned how my old school soul food cousins are between 55 and up just want you to know you got some youngings up in here too 🤣 Don’t do us like that some of us just be in the bushes watching lol🤫.. Well, I learned something new today ! I have never roasted my poultry but I am definitely gonna give it a try. I use all of the same herbs as you with the exception of rosemary and the addition of sage. I grow my own herbs every year. Here in my area of Tennessee we do cornbread dressing mixed with stale white bread and lots of sage. Thank you for the roasting tip.

I cook for & take care of my soon-to-be 94 year old pop here in TN. I grow my own herbs & use them in a lot of dishes. He doesn’t care much for rosemary, so I only use tiny amounts.

Oh yes chef Jeff that's strictly old school! The only difference is my grandmother and my mom put the giblets in there with the turkey necks when they boil them and they used those good ole gizzards and necks in the dressing! That stock looks delicious! Chef I just want to say God bless you, God bless you for looking out for other! The way you give back is a blessing and know that I'm praying for you everyday. Good recipe except you lost a lot of fond using aluminum foil. I would roast directly on the sheets to use the fond. Just my opinion
