The piano guy most likely was using something to alter the noise the key makes. So for example, any key you press will make the same noise, so when he throws the ball it will always be correct. Thats probably really confusing but I can't explain it any better.

Some keyboards that have a feature that plays a song no matter what keys are pressed. That may've been how ventriloquist dummy guy "played" the song. If he knew which part of the keyboard the real key would be, he can just drop the ball on that side of the keyboard to make it seem he hit the right one.
