Pasta alla Gricia, sometimes called White Amatriciana is a traditional Roman dish.
This underrated Italian pasta dish featured a creamy pecorino romano sauce, black pepper and fine crispy guanciale. You definitely want to look for it in restaurants when you visit Rome!
Pasta alla Gricia is considered the child of Cacio e Pepe pasta and the parent of Amatriciana pasta. Adding the pecorino shredded at the end, or as a cheese sauce are both considered acceptable preparations of this traditional Italian pasta recipe!

As an Italian I can confirm that this pasta is not underrated as it is one of the "four great Roman pasta's" along with Carbonara, Cacio e pepe and Amatriciana but I can also confirm that your technique and choice/use of ingredients are absolutely perfect.

That's a lot better than that "carbonara" made with cream they sell in bad European restaurants. I like how you cooked the guanciale slowly. Nice tip.

The original carbonara had bacon and cream. It's only because some "I know better" Italian that the recipe was changed in later years. Bad European restaurants are not bad, simply do not follow fads.

Good video. Just a suggestion, please don't use the camera angle showing absolutely nothing from 2:45 to 3:40 anymore. This kind of angle should just be a transition, not a fixed angle. SHOW the food being cooked.

Made this with pancetta and parm because that was what was available. It was amazing! One key is to boil the pasta in as little water as possible because that makes the water very starchy which is required for the sauce to be very velvety and thick.

I really prefer this to Carbonara. If you can make a good creamy Cacio e Pepe then Gricia has both more flavor and subtlety.

huge difference, huge difference! In taste but also in the preparation, it's a bit harder to make, the cheese can easily clump. But If you master Gricia, you also master Cacio e Pepe and Carbonara. Stay Hungry

Pancetta is ok but guanciale makes the difference for all Roman staple pasta so it's worth the effort of looking for it, it's available in many Italian delis these days

I just tried making this myself - due to convenience, I used Parmesan instead of pecorino and bacon instead of guanciale, but I was satisfied with the results. Good eats.

I find that emulsify the cheese might not be that easy, so I would recommend to blend it on low speed

I don't think anybody knows this pasta apart from that particular region, certainly not in the north.There are so many regional dishes and that is what they are: 'regional'.

Mamamia Hahaha...Just like my Mama would have made it...justa a leetle bit different. Using fried pig fat with skin on. Called in South Africa Krastiangs with fat syphoned off. Or Bacon perhaps. It's a shame guanciale is so hard to find here in America. It's hard even, to find panchetta in many places. Sometimes I have to settle for bacon, and it overpowers with smokiness.

Can you please tell us where we can buy that specific padella in N. America that’s used for the preparing the guanciale and the sauce? The padellas in Italy have those specific *curved* high sides with no edges - perfect for the mantecare at the end.

my pecorino doesn't mix that well, it's becoming one mass and when I mix it with pasta, it creates mozarella-like chunks, is the reason the cheese quality or am I doing smth wrong, I followed the recipe. I tried two times and both times got the same results

Hi Teo: you should mix the pecorino in off the heat. It sounds like the cheese paste you prepared is coagulating due to high heat. Could that be it?

I am a bit sad. My cheese melted and it didn't combine with the water. this happens to me with cacio e pepe too. I turned off the heat and I even let it rest for a minute or so. Even when making lazy cacio e pepe where i just grind cheese on a plate and I add pasta and water over it, the cheese still melts half of the time ;(. either the ph of the cheese is off by a lot, or the pasta everything is still too hot.

It has to be the temp of the water (too hot) or the grate of the cheese. You want the finest powder consistency on the cheese. Watch our cacio and Pepe video for an even more detailed explanation of how water temp affects the cheese. Keep trying!

Ok, so I've tried to make Cacio e Pepe about 3 or 4 times now and It's always a failure. I've tried several methods and the cheese just always turns into rubbery stringy gobs. The issue I think I may be having is the cheese itself. They always say to get Pecorino Romano, but I can't get that here. They only sell the cheap wedges of Romano cheese. I'm assuming that maybe this is just crap cheese and far removed from what Pecorino Romano is, kinda like how a cheap wedge of Parmesan is not even close to the same thing as Parmigiano Reggiano. Is this why it just won't turn into a sauce? I've made sure the heat is off and it is no longer hot, I've made the cheese into a paste, it just doesn't work. If this is the case, then what can I use as a substitute? They just don't sell that around here.

Hi there! So, the one thing you did not mention is how finely you grated the pecorino cheese. When we grate the pecorino from a wedge, we typically grate it with the fine food processor setting and THEN we also pass it through a fine sieve to create a powder-like consistency. If you are using coarsely grated cheese, that could also create the problem you describe. The super fine grated pecorino found in some supermarkets will work well. Hope that helps.

@@PiattoRecipes Ah, that could very well be the problem. I just passed mine through a microplane and then tried to kinda grind it up further with the back of a spoon. It was more like very short, super thin shreds.

@@Ineluki_Myonrashi At a point it doesn't matter when you stand in the kitchen. Is it literally just Cacio e Pepe, is just cheese and pepper, Gricia is added meat, and Carbonara is added egg? Is there any fundemental differences?

What's the idea of giving a side view of the stove? A camera view of what is in the pot is more important than pot!!

In addition to lightly salting the pasta water (this dish includes salty ingredients so salt less than usual), you want to simply salt to taste at the end.

From 2:40 to 4:30 we're seeing only the side of the cookware, rather than what you are doing inside it. Why not show and tell rather than just tell?

For those bothered by the brief side-of-the-pan angle-- sorry. We lost the footage of the better angle due to a technical malfunction on this one video...However I'm sure you'll enjoy the rest of our videos which don't suffer from this egregious error ;)
