Invented by Caesar Cardini in Tijuana Mexico, this is THE original Caesar salad recipe. Caesar Salad is one of the simplest but tastiest and easiest salads to make. I'm going to show you how to make a caesar salad dressing without anchovies and then throw it all together like Mr. Cardini would. This recipe works as a great and healthy school lunch for kids. But this will please any adult. This is an authentic recipe for the original caesar salad, without anchovies. Caesar's brother, Alex, had a similar salad called the Aviator's Salad, which included the addition of anchovies and was later named, Caesar Salad. But there are no anchovies in this one.

Ingredient List:
This salad serve 1-2 people, double the recipe for 4.
Croutons:
Day Old Bread, Torn
4 cloves of garlic smashed, left whole and in their skins
Olive oil
Salt & Pepper
Caesar Dressing:
1 Clove of Garlic, smashed and made into paste
1/4 Teaspoon of Dijon
3Teaspoon Worcestershire sauce (more if needed)
1/2 a Large Lemon or Lime, Juiced
1 Egg Yolk, Super Fresh, High Quality Large Egg
1/4-1/2 Cup of Parmesan
1/4 Cup of Olive Oil
Romaine Hearts

I went to the original Caesars restaurant in Tijuana. They still make the salad table-side. I had the salad, which was delicious, and an entree. The entire meal was like $20 USD. It’s a fine dining restaurant, and the creator of the Caesar salad, so that’s pretty a amazing deal. It was also almost completely empty, which was sad.

They use the old old school technique of wooden spatulas in wooden bowl to super emulsify everything. You can get it the same with glass n metal.

Great recipe and you obviously did your research; but I wanted to let you know I used to work at a restaurant here in Houston, in which we consulted Carla Cardini about her grandfather's recipe, (she lives in Houston) and trained us on how to be as true to the original as possible. She said the main thing is that being from Italy, Alex Cardini made the salad with ingredients that were frequently used in Italian cooking, hence the garlic, parmesan cheese and EVOO. The anchovies were a matter of personal taste, hence the reason why some people use it, others don't; but Worcestershire sauce is a must. The most interesting fact she told us, was that although many recipes use lemons, the ORIGINAL recipe from Mexico uses limes! If you travel to Mexico, you will find an abundance of limes and almost no yellow lemons; the type of acidity that limes give off, is different as well. Mustard was not in the recipe she gave us, but the tossing of the whole leaves that you did was spot-on as well as the use of croutons; and she said the original presentation at Ceasar's restaurant, would prepare the salad table side, set the dressed whole leaves on the table and encourage dinners to eat it with their hands. Alex Cardini created the original salad while working at his brother's restaurant, and he originally called it the Aviator's Salad because so many airmen would travel from San Diego down to Tijuana, Mexico, to eat and party at Ceasar's Restaurant; and once the salad got famous, people would refer to it as Cesar's Salad.

So I made those onions. He didn’t specify a quantity, just said a “splash”. I don’t know how much that is so I thought I’d try 1/4 cup. Too much I think as I had quite the fireball! Scared the $h*t outta me, and my husband who heard me scream, looked over and freaked! He thought I burned myself. I was standing far enough back that I didn’t. Don’t think I’ll be trying that again anytime soon. I will make the onions, add bourbon and just let it cook off without flaming it. The onions were tasty though - but I had PTSD for a good hour afterwards. Lol. I made the salad too - dressing was awesome!

This was a beautiful presentation. Love the ingredients but I have to say... I've had both... anchovies or no anchovies and it just tasted better with them. They actually freak me out and I've done the ones that are whole and had to grind.... Because I couldn't find the paste, and the difference is night and day. I HATE looking at or thinking about anchovies but DO NOT leave them out. Just need a bit. My personal preference. Thank you for your video. I really loved the part where you left the romaine in long whole stocks/leaves. Whatever you decide with your Caesar dressing, do this with the romaine. Love Love ❤️♥️♥️.

I was always dubious about the anchovy thing, too. It actually never tasted right the few times I've had Caesar Salads with it included. Yours looks a whole lot better all around :)

Update: turned out flippin great. Fantastic! Best Caesar I’ve had at home. Also made some simple marinated grilled chicken with it. I think next time I might up the garlic (I can never have enough), but that’s about it. Thanks dude!

Would you ever do any kind of “draw my life” video. Interested to learn more of who you are, your past and future foodie stuff. Maybe like a drawing my life in food edition?? Could be something to the extent of making a 3 course meal inspired by what got you into food and expand through your dreams you have for your career, meanwhile kinda giving us a rundown and bit of insight to who you are as a chef. It could maybe even be like you make the very first meal you learned, something challenging that you were scared to make, and making a meal that is “you on a plate”? Just an idea, I feel like you could make something super creative and interesting! 😊

Omg, why did I assume Caesar salad was Italian?! That garlic technique is my personal favorite. I love the oils it releases. What is your favorite parmesan cheese brand? I could eat 3 trays of your Caesar salad by myself!

Cardini was Mexican and Italian, he was from Cali, but went to Mexico because of prohibition. So it’s still Italian, and there’s only one Parm, parmegiano reggiano, you’ll tell because it’s cracked off a block and has the rough edges,

The anchovies: salted anchovies in oil are great, and they can be easily worked into a paste with the knife which enhances the flavour greatly without giving any fishy flavour. Warning: don’t use pickled anchovies, those will ruin the dish.

The reason for smashing the garlic into the bowl, a wooden bowl, is for the flavor to seep into the bowl and onto all of the ingredients. Also, if I remember correctly the egg sat in hot or warm water, (don't remember) before breaking it open?

If you are worried about egg safety, you can also buy Pasteurized eggs. I believe they are superheated for just a few seconds to kill any harmful organisms, but otherwise operate like normal eggs. On the East coast, they brand "Eggland's Best" is super common, but I'm sure there are dozens of brands. Look for the word "pasteurized" and expect them to be a little pricier.

Good recipe, however chopping the garlic gibes better results than smashing and making into paste. Chopped garlic release its aroma slowlier and it is slightly noticeable (according to original recipe).

My stepdad used to make this at the dinner table. The first time he made it, he dressed up in his suit and tie. As I recall, he nested the salad bowl inside a larger, ice filled bowl. I love this salad...mangia!

Man, you just switched anchovies with Worcestershire sauce ! That's a huge difference with an overpowering taste of that sauce . Plus the Parmesan cheese is supposed to be grated in the dressing because of it's distinct flavour... You messed up bro

Caesar salad is always a favourite salad that I like to eat when I'm out, the only problem is that the dressing usually isn't strong enough, I think it has to do with that fact that many places tend to dilute theirs with mayonnaise to stretch the product. Your version of it makes sense for many people as they don't own wooden salad mixing bowl kit since not too many people eat salads when they're eating in. In Canada, many people do enjoy eating in as many of their kitchens have sufficient counter space and it really makes cooking more of a pleasure than a chore. In the end, eating in is far more cherished and an enjoyment. If cooking to you is a pleasure, then eating it will become easier, especially if your friends and family like it in the end. Let's not forget the facts that we have longer winters filled with ice and snow, compared to most US states.

I love what you're doing! I recently learned about Cardini as well. You're right about the anchovies, so I won't give you a hard time about that. I never knew this but I learned that supposedly his original dressing recipe was made with limes, not lemons, and still is today at the original restaurant in Mexico. 😁😉

Can't possibly eat a caesar salad without anchovies, and you need them ,the original Worcestershire sauce had a high anchovy content but now it is piss weak so anchovies are definitely needed

I make this dressing minus the egg, and a splash of fish sauce (3 crabs) in leiu of anchoivies - call it 'caesar cruda'

I just watched a Mark Weins video where he wa a Ceasars in Tijuana and they showed them making the original salad and mashed anchovies were in the dressing.

Things change over time. Cardini was adamant that he didn't want anchovies in his dressing as it was too powerful a taste. Thats why he uses worcestershire sauce, which does contain Anchovies but not overpowering

I do mine up like that, but with anchovies and I add bacon bits. The real ones, not that fakin' bacon stuff.
